Expect a glut of pasta recipes from me while I work my way through The Pasta Man. I am trying to recreate Mateo’s cover photo but I am not having much success. The first pasta I made was this rich egg dough. The egg yolks make this an extremely pliable dough.

I recently listened to a Podcast where the need for Crisis Intervention was highlighted. A woman spoke of her child who was over the age of eighteen who was having a mental health crisis. As he was not a danger to either himself or other people, nothing could be done to get him help. He did not think there was an issue and all the mother could do was inform her local police that her child was displaying psychotic tendencies. Despite her best efforts, when he had a mental breakdown, the police were called, and even though they had been informed it was a medical problem and not a life threatening issue, they shot and killed him. Cases like this have prompted a local TV series (Station 19) to focus on Crisis Assistance, rather than police intervention, where firearms may be used.

Yesterday, at the post office, a man was at the counter waiting for a parcel. The item had been returned to the sender as he had failed to collect it. He had been sent a final notice in November, which he ignored. His anger towards the staff member was unnecessary. But his anger after the fact was scary. He punched the topbox of his motorbike, and then slammed his helmet into it several times. He then put his helmet on, punched the bike a few more times before riding off, swearing so loudly he could be heard across the road. I felt the need to report this to my local police as who knows where he was headed next. And with that type of residual anger, he could have ended up hitting someone. I don’t know what came of it, but I certainly hope a crisis was prevented.

Rich Egg Dough
Ingredients
- 140 g 00 flour
- 2 egg yolks
- 1 egg
Method
- Place the flour, egg yolks and egg into a bowl of a stand mixer
- Using a dough hook, mix until a dough forms
- Knead for 10 minutes then turn out onto a piece of cling film
- Flatten into a disc and cover tightly
- Place into the fridge for at least 30 minutes, or overnight if you have time
- Roll out and use as needed
Your pasta looks impressive . The story about the anger does sound really scary.
I can only hope he was not going home to someone who would bear the brunt of it!
