Thai Inspired Stir Fry

I love stir fry’s and if ever I want a quick meal, and don’t feel like cooking I head out to Simply Asia for a not so simple wok cooked meal. This wok cooked meal can be cooked just as quickly in your own home. Take the time to cut your own vegetables and enjoy your own Thai Inspired Stir Fry! I use sirloin as the cut of beef when I make stir fry. Just be sure to cut it evenly so that it all cooks at the same time. Did you know you can rub your protein in cornflour to make it tender? The key to Thai dishes is the balance between sweet, salty, tart and spicy. I always use limes for the tartness. We do not get Thai limes here in South Africa so I just make use of the ones we do get. The herb of choice here is coriander. If we had it I would use Thai basil as well. But that herb is not one that our shops sell. Use soy sauce for the saltiness, and sambal oelek for the heat.

Thai Inspired Sirloin Stir Fry

Ingredients

  • 250 g sirloin steak, trimmed and sliced
  • 5 mls cornflour
  • 5 mls sambal oelek
  • 15 mls soy sauce
  • 15 mls lemon infused olive oil
  • 1 lime, zest and juice
  • 1 red pepper, sliced
  • 6 mushrooms, sliced
  • 1 ear corn, kernels only
  • 15 mls peanut oil
  • 1 handful fresh coriander, roughly chopped

Method

  • rub the cornflour into the steak
  • add the sambal oelek, soy sauce, olive oil and the zest of the lime and leave to marinade
  • heat the peanut oil in the wok
  • when hot seal the sirloin and set aside
  • add the vegetables and 1 tablespoon water to the wok
  • just before the vegetables are done add the steak and the marinade and the lime juice
  • serve with the coriander to garnish
