This bacon relish beer bread is not only super easy to make. It is super tasty. You can use any store bought relish you have, as long as it is not too moist.

In May this year I bought three necklaces. One for my friend Talya, and two for myself. The gold one I chose is for everyday wear at work. And the white gold necklace is for when I am dressing up to go out at night. Two days after we got back from overseas my gold one went missing. I did not tell Dave as I already had the saga with my missing watch strap. A few days later my beautician called to say I had left it at her when I had my appointment. I was quite relieved to know I had not lost it. But the relief only lasted a week, as no sooner had I got it back from her, it went missing again. A week later one of my staff members found it lying next to my desk.

When I had put it on, I had not clasped it properly and luckily for me it fell off at work, and had not been vacuumed up. You would think I would have learnt from that, but I have not. Because several days later I put the white gold necklace on, and proceeded to get ready to go out. And the next thing I saw was Holly playing with something that was not her rope! It was my necklace. She was tossing it about and the sparkle caught my eye. Luckily so, as I would have hated for her to have swallowed it by mistake. I am now doubly cautious when putting the necklaces on the make sure they are properly secured. Have you ever lost a piece of jewellery and then found it days or weeks later?

Bacon Relish Beer Bread

Use any relish you have, as long as it is not too moist

Makes enough for: 1 loaf bread

Ingredients

  • 500 g flour, plus extra for dusting
  • 250 mls water
  • 175 mls beer
  • 100 g bacon relish
  • 30 g honey
  • 22.5 mls olive oil
  • 5 g instant dried yeast
  • 5 g fine salt
  • canola oil for greasing

Method

  • Place the flour, water, beer, relish, honey, oil, yeast and salt into a stand mixer bowl
  • Using a dough hook, bring the mixture together until it forms a dough
  • Knead for 10 minutes, then turn out onto a lightly dusted surface and shape into a ball
  • Lightly oil the bowl and place the dough back, seam side down
  • Cover and leave to prove until doubled in size
  • Tip the dough out onto a lightly dusted surface and knock back
  • Shape into a ball and place seam side down into a lightly oil round lidded pot
  • Flatten the top of the dough slightly then set aside to prove until doubled in size
  • Preheat the oven to 220° Celsius
  • Put the lid on the pot and place into the oven for 50 minutes
  • Remove from the oven and tip out onto a wire rack to cool completely before cutting
