Let’s talk about candied ginger
A few years ago Bev packed some candied ginger as a snack item for while we were away. I had never seen these dried ginger treats before, but since then, they have been a staple ingredient in my pantry. I don’t make these myself as the process seems too tedious. One would start by finding young ginger, and then peeling it. After that it needs to be evenly sliced and then simmered to soften. Only then can a sugar syrup be made, and the ginger simmered again. Once translucent, the ginger is removed from the syrup and air dried before being tossed in sugar for storing. Seems way easier to spend my money on the ready made product which is great to use in baking.
Why these candied ginger cookies
I really do not need an excuse to bake! During the year I bake every Saturday. These treats used to be shared with loved ones, but now they are solely for our enjoyment. Dave takes the leftovers to work so he has something sweet for tea time. I made these candied ginger cookies in December while we were on leave. And the first thing I did was set aside 200g for a recipe I was working on. Dave and I scoffed the rest every time he made an espresso. And let me tell you, I drank a lot of coffee for a few days! They have a lovely bite from the ginger, and the most amazing texture. If you prefer a harder cookie you could bake these for slightly longer and they would still be perfect.

Candied Ginger Cookies
Ingredients
- 150 g fructose
- 140 g salted butter, softended
- 1 egg
- 250 g flour
- 5 mls ground ginger
- 5 mls baking powder
- 25 g candied ginger, finely chopped
Method
- Preheat the oven to 180° Celsius
- Place the fructose and butter into a stand mixer bowl and cream together until light and fluffy
- Add the egg and beat until combined
- Place the flour, ginger and baking powder into a bowl and mix to combine
- Add to the stand mixer bowl while the motor is running, a tablespoon at a time, until just combined
- When the dough has come together, add the ginger and mix until just combined
- Use an ice cream scoop and scoop balls of the dough and place onto a lined baking tray, 5cm apart and press down slightly with your hand
- Place into the oven and bake for 15 minutes
- Remove from the oven and leave to cool on the tray for 5 minutes before transferring to a wire rack to cool completely

i do love ginger! we have a very successful ginger “factory” here in queensland which provides a massive amount of the processed ginger globally. I like to add the ‘naked ginger’ to my mango chutneys, which always goes down a treat. Your biscuits sound delightful!

I too enjoy good ginger cookies. They look wonderful. When I was much much younger, I used to buy some chewy ginger candies from a local store…they were so good that I went there almost weekly to get a bag.
We get chewy ginger candies here, and they are even sugar free! But I try not indulge 🙂
