Coriander Paratha Topped With Smashed Avocado

To me, coriander paratha is the perfect bread to be served with curry. Even better is to top it with smashed avocado. I used a combination of salt, pepper and lime to flavour the avocado.

When I started blogging on WordPress.com, there was no choice about the permalinks my blog used. They included the date and to this day I still see many bloggers using this format. When I moved to WordPress.org I maintained this aspect of my blog. However, when I won a session with a SEO guru, he changed all of my permalinks. A global change was done so that the date was removed. At the time I did not know what he was doing, and trusted that his work was to my benefit. This however led to several issues. The one was that all my internal links showed up as being broken. A broken link is one that is displayed with a line running through it. However, to Google this is seen as an error. I am slowly working my way through all the broken links to fix the internal redirections.

In theory, when you change the URL of a blog post you should actually set up a 301 redirect. That means if someone types in ABC and the post is actually XYZ, your blog automatically takes them to where they are meant to be. But if you don’t set that up then when they type in ABC it comes up with a 301 not found error. This does not bode well for Search Engine Optimisation and I am sure there are lots of 301 errors on my blog. Thankfully I am not concerned with SEO rankings and will get around to sorting them out when I can run a crawl error log on my site. In the meantime I will just carry on learning from the gift that keeps on giving.

Coriander Paratha

Make this to serve with curry, or with smashed avocado

All Rights Reserved: An original recipe from Lavender and Lime

Ingredients

  • 75 g flour, plus extra for dusting
  • Pinch of salt
  • 60 mls tepid water
  • 20 g coriander, finely chopped
  • Canola oil for frying

Method

  • Place the flour and salt into a mixing bowl and whisk to combine
  • Make a well in the centre and pour in the water
  • Use your fingers to combine and then mix until the dough pulls away from the bowl
  • Turn out onto a lightly floured surface and knead until elastic
  • Divide the dough into 4 balls weighing 30 grams each
  • Roll out each ball as thinly as possible, in the rough shape of a square
  • Sprinkle 5g of the coriander onto each disc
  • Roll the discs into a sausage shape using the longest length as your base
  • Then roll each sausage shape into a spiral, tucking the end into the dough, and roll each spiral as thinly as possible
  • Pour enough oil into your non-stick frying pan to cover the bottom of the pan
  • Heat over a medium temperature and then fry each paratha on both sides for 3 minutes a side
  • Drain on kitchen towel before serving

  1. Your website looks very clean, like a fresh load of white linen! I’m sure that I too, have lots of those 301 directs, hopefully I will get to them wintertime. What I don’t understand is why having the date is so bad on posts. I kind of like them! No idea why. It’s not like it matters when a recipe was posted. Good ones are timeless but for some reason I like to know when it was posted. Your smashed avocado looks great!
