This cream of leek and cauliflower soup packed a great flavour punch and I adapted it slightly from the original.
Cream Of Leek And Cauliflower Soup
I do not consider myself an aggressive driver. I am impatient with other drivers (read idiots) on the road but my own driving is cautious. I’m aware of what is going on around me and drive defensively to avoid accidents. I make good use of my hooter to ‘tell’ people what I think of their failure to indicate, follow the rules of the road or when they drive too slowly in the fast lane of the highway. The other morning a car drove through a stop street and tried to turn in front of me. I honked my horn to let him know I was in the space he wanted to occupy and I could not change lanes due to a pedestrian who was in the middle of the road. He slowed down and pulled in behind me and I thought that was that.

Well it wasn’t. He followed me after I turned down the road that leads to my office, drove like mad to block me off and I am sure he was about to get out of his car to attack me. I already had the car in reverse and was ready to get myself out of the situation when a car approached us and he drove off. After that, I sped away and only when I got out of the car at work did I realise how shocked I was. I was not afraid at the time, but it could have turned nasty. In situations like these we need comforting. As it was before breakfast I chose rescue remedy but had it been later, soup would have done the trick.
Cream Of Leek And Cauliflower Soup
Ingredients
- 25 g coconut oil
- 2 leeks, white part only, finely sliced
- 2 pork rashers, cubed (if you leave the bones in, remember to count how many!)
- 5 mls salt
- Freshly ground black pepper to season
- 10 mls minced garlic
- 510 g cauliflower, thickly sliced
- 1 l water
- 160 mls cream
- 40 g cream cheese
- 1 bunch fresh chives, chopped
- Grated cheddar cheese to garnish
- Strips of salami to garnish
Method
- Place the coconut oil into a medium sized sauce pan and heat over a medium temperature
- Sauté the leeks until they start to soften
- Add the rashers and cook until the fat renders down
- Add the salt, pepper, garlic, cauliflower and water
- Continue cooking until the cauliflower is soft
- Add the cream and cream cheese and stir to mix
- Reduce the heat and simmer for 10 minutes
- Remove the bones and then remove from heat
- Purée with a stick blender until smooth
- Add the chives, return to the heat and simmer until reduced to your preferred consistency
- Garnish with the cheese and salami and serve hot

What a dreadful way to start the day – Tandy – but this soup looks wonderful, I’ave had thoughts of cauliflower soup because they are looking so good in the markets at the moment.

This is exactly why I almost never use my horn on the car. You might think you mean one thing, but the other person could so easily take it as something completely different – as happened here. I will admit to yelling my head off at a few people from time to time – particularly the ones who don’t indicate their intentions – but I try not to interact with other drivers to avoid this very situation.
Anyway, the soup sounds wonderful! I’ve bookmarked it for a time when I’ve more cauliflower than I know what to do with. 😀
I am practising restraint and not using my horn. Instead I have taken to ‘talking’ to the drivers instead. Hope you enjoy this soup and thanks for the visit 🙂

Oh my gosh – Tandy that must have been so scary! Something similar happened to me once – when I merged onto a highway, the driver behind me I guess thought I shouldn’t have merged infront of him – he sped around me and slammed on his breaks – I got into the next lane – and he did too and slammed on his breaks again – this happened a couple more times and I got my phone out and took a pic of his tag and as I was getting ready to call the cops, he sped off! I wish I had some of this comforting soup waiting for me!

Tandy, this soup looks delicious, like you alluded too, the perfect comfort soup. I love making cauliflower soup, it is a family favorite here, but never tried with cream cheese. Thanks for the inspiration! And I am a defensive driver too, and a slow driver, I get so mad when people tailgate me. With 2 little kids in the back, I’m just not going to go 10-20 over the speed limit!
