After 20 years of living together, and 28 years of knowing each other, I learnt something new about Dave. He is not a fan of green beans. I like them blanched in boiling water, slathered with butter and salted. When I made the discovery I had just purchased a large bag of them. So I made a green bean soup instead of wasting what Dave was not going to enjoy the way I liked to cook them! And with a soup, I could just dish up the broth for him without the beans.

To me, one of the easiest things to do is make fresh pasta. I use my stand mixer for all the heavy work such as kneading and laminating. And the hardest thing I have to do is decide what type of pasta to make. In fact, one of my top performing posts is the one for extruded pasta. The most difficult aspect of making fresh pasta is finding the 00 flour needed. In December my mom made the best gnocchi for dinner and a few weeks after that, I used the last of the flour to make fettucine to go with some crayfish tails. The store I had last bought the flour from had no stock and so I asked the Google Machine for help. I was directed straight to the milling company who put me in touch with their local distributor.

She replied asking me to complete 4 pages of a 6 page credit application form if I was paying COD, or all 6 pages if I wanted an account. As well as providing a copy of my ID, my CK document and confirmation of my banking details. All so that I could spend less than R60 with them. I replied to both her and the miller saying that I would rather find another supplier. Two days later she replied stating I could buy online or come in to one of their two stores. By this time I had already found another supplier with a little help from my friends. The flour plus a few extra items had been purchased and collected without any hassle. Out of curiosity I went ahead and looked at their online store and they do not allow for collections, only deliveries at a flat fee of R150! Totally ridiculous if you ask me.

Green Bean Soup
Ingredients
- 15 mls olive oil
- 1 onion, peeled and finely diced
- 1 clove garlic, crushed
- 3 large tomatoes, trimmed and diced
- 1 large carrot, grated
- 1 l chicken stock
- 1 pinch fructose
- 500 g green beans, trimmed and cut into bite size pieces
- 15 mls dried basil
- salt and freshly ground black pepper to season
Method
- Heat the olive oil in a large pot over a medium temperature
- Add the onions and sauté until soft
- Add the garlic and cook for a minute before adding the tomatoes and carrot
- Allow to sweat before adding the stock and fructose
- Increase the temperature and bring to a boil
- Once boiling reduce the temperature, cover and simmer for 20 minutes
- Blend the soup using a stick blender until smooth
- Add the beans, basil and seasoning and simmer uncovered for 10 minutes
- Adjust the seasoning and serve

Funny that Dave doesn’t like green beans! I guess I never thought making pasta was easy…it’s on my to-do list for sure! But sometimes paying a buck a box for pasta is my easy button. But I bet homemade pasta is beyond delicious so I should give it a whirl.
