Regular readers of my blog will know about our chicken braais that we have with our friend. I am always responsible for making the salads and they are usually couscous or quinoa based. To change them up, I add different vegetables and an interesting salad dressing. This time I made a hummus salad dressing with garlic toum hummus.

Since 2003 Dave and I have had a regular Sunday routine. If we are at home and have no other plans we pop in for a sundowner with a friend of ours. That would happen every week, as long as he was home of course. Nico was born in 1931 and grew up in Gordons Bay and Strand. His stories about the road and harbour being built were fascinating. He started off his working life at AECI, the ammunitions company local to our area. He could regale you for hours with his knowledge about the place. But his passion was with fishing and he became an icon in the industry. Despite the age gap, he and I could talk for hours as he was always willing to learn something new. And I was always willing to hear about his daily life.

During hard lockdown, these weekly visits came to an end. But Dave and I decided that his need for company and a good talk was more important than anything else. And so we resumed our visits, socially distancing of course. I am so glad we did as at the beginning of June he was admitted to hospital. We spoke often on the phone at the beginning. Sometimes just because he needed to give me a shopping list. And at other times for him to chat. But I noticed that he was repeating himself. And during his last call to Dave he was sounding confused. On Sunday the 28th of June I had a sudden thought of how I missed our glass of red wine with him. And at the same time, he passed away.

Hummus Salad Dressing
Ingredients
- 45 mls hummus
- 30 mls apple cider vinegar
- 45 mls lemon juice
- 5 mls Dijon mustard
- 1/2 cm fresh root ginger, peeled and grated
- salt and freshly ground black pepper to season
Method
- Place the hummus, vinegar, lemon juice and mustard into a mixing bowl
- Whisk to combine then add the ginger
- Stir to mix then season to taste
- Pour into a salad dressing bottle and shake before using
