Kladdkaka

Kladdkaka is a dense cake with a soft interior. Think of a molten chocolate cake with a crispy crust.You can serve it with a red fruit coulis, red summer fruits, cream, or ice cream. I served mine with an olive leaf gelato.

Sweet treats

The name kladdkaka derives from the Swedish word kladdig,  meaning  sticky or messy. And let me tell you, I have made both a sticky version and a messy one. The first time I baked this, it was not perfect enough for the blog. And the second time it did not set enough and we ended up with a mess. I used pieces to make a dessert with chocolate mousse and fresh berries. Much like a trifle, but nothing like what I had planned. The key to getting this correct is the coating on the tin. You also need to let the cake cool completely before removing it from the tin. As the cake has no baking powder, do not expect it to rise a lot.

Sweet ideas

Years ago, we considered purchasing a holiday home. On one trip to Sedgefield we spent time looking for the perfect place. After viewing one, I realized this was not a sweet plan. We would be tied into going there each holiday, and we would have to spend money each month on upkeep, rates and taxes. It was then that I decided the money would be better spent going to different places each year, and that is what we do. One local holiday to explore the land of our birth, and one overseas trip to learn more about a place. So, when friends told me this would be their plan for the near future I reminded them of the same things that stopped me. And that as an investment property, the peak time to let it out is in December, when they would want to use it.

Kladdkaka

This is a divine dessert that can be served as is, or adorned with fresh red fruits
Recipe Category: Baking, Dessert
Makes enough for: 1 cake
All Rights Reserved: An original recipe from Lavender and Lime

Ingredients

  • 200 g salted butter, plus extra for greasing
  • 15 g fine bread crumbs for coating
  • 200 g 80% dark chocolate drops
  • 250 g fructose
  • 4 eggs, lightly beaten
  • 40 g flour

Method

  • Preheat the oven to 175° Celsius
  • Grease and line a 20cm loose bottomed tin, and coat the sides with the breadcrumbs
  • Place the butter into a medium size saucepan and melt over a medium temperature
  • Add the chocolate and leave to melt, stirring occasionally
  • Add the fructose and stir until dissolved
  • Remove from the heat and slowly pour in the eggs, while stirring continuously until combined
  • Add the flour and fold to combine
  • Pour the batter into the prepared cake tin, level the top and place into the oven to bake for 35 minutes
  • Remove the tin from the oven and place onto a wire rack and leave to cool in the tin
  • Once cool, run a knife around the edges and turn out

  3. Exciting to learn about a new (to me) treat! It looks neither sticky nor messy, but delightfully dense, and incredibly simple in preparation. I’ll have to see what I can do to make it vegan.

  4. anything dark chocolate goes down well with me 🙂 We have a friend who has several rental properties; she says it is a right pain to manage, and she doesn’t trust the real estate agents. Eek. way too stressful!
