Microwave Cheesecake

To make my microwave cheesecake I went and bought two new bowls from a local wholesaler. Then, to take a pretty photograph I decided to make two of these! I also used the excuse of perfecting the recipe to make them more than once, which meant I had a lot of cheesecake to enjoy.

Memories of my favourite desserts

When I was staying in New York, my Aunt took me to The Waldorf Astoria for lunch. The highlight of the meal was the dessert buffet, and I helped myself to one of everything! This was my introduction to New York cheesecake, now one of my favourite desserts. The other is crème brûlée which I have been devouring since a child. Regular readers to my blog will know that the first time I had this was at Gatrilles, and their recipe is my benchmark. Still made to this day at 96 Winery Road, I always order it when we dine there. My other top choice is tiramisu which I have enjoyed in many places in Italy, most memorable being the one I had in Firenze while on honeymoon. The waiter was as memorable as the dessert, and it is a story I love retelling.

Cheesecake is not Dave’s favourite

Dave is not a fan of soft desserts. He would never order tiramisu, or crème brûlée, which means I never have to share. Cheesecake is another thing he does not enjoy, and so I seldom make it. In fact, his son made a comment about this the last time I made cheesecake for the blog. This dessert is made using smooth cottage cheese, full fat cream cheese or ricotta. Mixed with eggs and sugar it is a rich dessert. It can be made with a crust or with a biscuit base. Some are baked and others are set in the fridge and they are always served chilled. Because Dave is not a fan of this treat I decided to make a microwave cheesecake for one. The recipe was inspired from Amarula, a unique cream liqueur from South Africa.

Microwave Cheesecake

If you cannot get Amarula where you live, use any cream liqueur of your choice
Recipe Category: Dessert
Makes enough for: 1 person
All Rights Reserved: An original recipe from Lavender and Lime

Ingredients

  • 10 g butter
  • 13 g digestive biscuits, crushed
  • 35 g full fat cream cheese at room temperature
  • 35 g smooth ricotta at room temperature
  • 15 g fructose
  • 15 mls Amarula
  • 1 egg, lightly beaten
  • cocoa powder for dusting

Method

  • Place the butter into a microwave safe glass bowl, or mug and melt in the microwave
  • Use a pastry brush to grease the sides with some of the melted butter
  • Add the biscuits and mix to combine, then press down to form a base
  • Place the cream cheese, ricotta, fructose, Amarula and egg into a small bowl and whisk to combine
  • Pour on top of the biscuit base and place into the microwave
  • On 900 Watt setting do the following sequence:
    Microwave for 40 seconds
    Rest for 5 seconds
    Microwave for 10 seconds
    Rest for 5 seconds
    Microwave for 20 seconds
  • Remove from the microwave then set aside to cool before placing into the fridge for an hour to set
  • Dust with cocoa powder and serve

My husband also doesn’t like anything with cheese :-// He calls cheese the rotten milk… I love cheese of any sort, but just dare not to indulge myself..actually had a huge chunk of Parmesan this morning and I feel pretty guilty already…LOL..your microwave cheesecake looks great, but unfortunately, I don’t have a microwave.

  2. I’ve made a few mug cakes in my day, but never cheesecake in the microwave. What a novel idea! I love that approach since I can’t exactly make a whole cheesecake just for myself. I’ll have to try veganizing it.
