It is not often that I can find shallots at Woolworths, and so when I do I make sure I buy them. To me this is a staple ingredient in Europe and one I have transported often in my suitcase. In fact, the last lot came all the way from Johannesburg, but I managed to find some locally last week. Dave much prefers shallots to onions as they are milder in taste. I love them as we never need an entire onion for a dish. Unless of course I am making a super huge batch of oxtail. Here is a recipe for Pasta With Shallots And Sausage and cherry tomatoes for colour. I prefer to use shallots as they are sweeter and smaller than onions. Often if I cannot find them we end up cooking the entire onion and setting half aside to use at another time.

Pasta with Shallot, Sausage and Cherry Tomatoes
Ingredients
- pasta of your choice
- 15 mls olive oil
- 1 clove garlic, sliced
- 1 chilli - left whole
- 2 shallots finely chopped
- 2 sausages sliced
- 125 g cherry tomatoes sliced
- grated Parmesan to garnish
Method
- while the pasta is cooking heat the olive oil in a pan
- add the garlic, chilli and shallots and cook until the shallots are transparent
- add the sausage and tomatoes
- add some liquid if necessary - I use the water that the pasta is cooking in
- remove the chilli
- add the drained pasta, garnish with the Parmesan, serve and enjoy

Any and all sausages would work for me. It sounds delicious with the flavor enhancing elements that go into it!
