Pomegranate Jam | 4 Ingredient Recipe

I was really amazed how much the arils from one pomegranate weighed. That is all the is needed to make this delectable pomegranate jam, together with some fructose, a pinch of salt and lime juice.

We have been chasing a leak in our roof for quite some time now. The problem is, you only know the roof is leaking when it rains. And you cannot fix it until the rain stops and everything is dry. At first the rain coming into the house was attributed to where the roof over the utility room was meant to be. But when that went up, the leak did not go away. It was of course less than before, which meant no puddles of water in the house. The join was sealed, flashing was put on, and a very messy paint job was done. And still we had a leak. At first Dave thought it was due to the direction of the wind, and one small section still not properly sealed. But this has been attended to and still its raining in the house.

I should really say dripping so understand I am exaggerating slightly. We had a long summer with very little rain, which is the norm for us. And then winter arrived with a proper storm. It was only then that we realized the leak was far higher up on the roof than we thought. And how did we work that out? Well, it was dripping ice cold rain water on us in the shower. It explained the wetness Dave had seen on the shower floor a few weeks back when it had rained during the night. And now at least we can tell the builder where on the roof he needs to do some sealing work. And at the same time I am going to get him to tidy up the messy painting job.

Pomegranate Jam

Use fresh pomegranates when in season to make this jam
Recipe Category: Jam
All Rights Reserved: An original recipe from Lavender and Lime

Ingredients

  • 1 pomegranate, juice and arils (total weight of mine was 230g)
  • 80 g fructose
  • 22.5 mls lime juice
  • 1 pinch fine salt

Method

  • Place the pomegranate arils, juice, fructose, lime juice and salt into a sauce pan
  • Place over a medium temperature and bring to a simmer, stirring until the fructose has dissolved
  • Leave to simmer until thick, stirring occasionally
  • Pour into a sterilized glass jar, put the lid on and refrigerate
  • Use as needed

  1. Sorry about your roof, frustrating. We are considering a metal roof when ours needs replacing. But anyhow, LOVE the idea of pomegranate jam! Sometimes I wonder if arils would make a good pie filling?!? The lime is an interesting addition, I will have to try this!

  2. Pomegranates are pretty exotic here in the northern part of the US, and we rarely buy them or know what to do with them. This is an interesting idea, though I think the season here is October.

    1. It makes sense for them to be in season in October. They are meant to be the fruit for Rosh Hashanah but with our seasons topsy turvy they come in earlier 🙂

  3. Concerning the roof leaking: we had the same problem some months ago.
    The roofer we called says «Can only check it, when it’s raining!» – When it was raining, we called him again. His answer was «Oh, it’s raining, that’s why we can not come!» (this is not a joke).
    We authorised an other roofer to replace all the bolts of the panels – now we are safe! 😜
    The pomegranate jam sounds delicious – thank you for this inspiration!
