Scallop Pizza

The foodbuzz project food blog set various tasks and it was my intention to complete all of them. But, that did not happen. Life intervened and here I am, many months later sharing my idea for the pizza challenge. The taste of this is scallop pizza is unique and I will continue to experiment with the concept of a pizza base, sauce and topping. I have a large pizza baking pan and this fed the two of us quite easily.

Scallop Pizza

Makes enough for: 1 pizza
All Rights Reserved: an original recipe from Lavender and Lime

Ingredients

  • 1 portion pizza dough (you can use store bought bread dough)
  • 15 mls olive oil
  • 2 rashers streaky bacon, sliced
  • 250 mls frozen peas
  • 1 clove garlic
  • 15 mls lemon juice
  • 15 g butter
  • 8 scallops, roe included
  • 15 g watercress

Method

  • Preheat the oven to 180° Celsius
  • put the pizza dough into the tin and do not allow it to rise
  • brush with olive oil and season with salt
  • place the bacon on the pizza base
  • bake for 15 minutes
  • blanch the peas in boiling water with the garlic
  • drain and puree together with the lemon juice
  • heat the butter in a pan
  • season and pan fry the scallops
  • remove the pizza from the oven
  • smooth on the pea puree
  • add the scallops ensuring each slice will get one
  • put the watercress on top of the pizza

The ingredients used for my scallop pizza
  • pizza dough: I make this more often than not in my bread maker as it takes no time at all
  • olive oil: buy the most expensive one you can afford. Make sure it is extra virgin and cold pressed.
  • streaky bacon: this used to be a staple ingredient in my kitchen, but now I buy bacon bits as it is more cost effective, and more often than not I cut the bacon up in any case
  • frozen peas: these will also be found in my freezer. The easiest way to cook them is to zap them in the microwave with a little bit of butter, salt and dried mint
  • garlic: buy firm cloves and don’t worry if they sprout. If it bothers you, plant the sprouted ones for your own harvest
  • lemon juice: there will always be a bottle in my fridge as I add it to my daily cup of green tea
  • butter: if I can, I buy unsalted. But this is becoming more and more difficult. If you buy salted butter keep in mind to reduce the salt in your recipe
  • scallops: these are a rare treat and not something I buy in South Africa. They are shipped in frozen and really not worth the expense, or the airmiles
  • watercress: I buy this from our local grocer, usually in a small pack and add it to our lunchtime salads

    1. I buy frozen ones when I see them – they come in a ziploc type of bag, and are available from Seafood on Sail in Strand. I think they have an outlet in Hout Bay as well, but I am not sure. The pizza was a whim 🙂
