This strawberry and lavender jam has to be one of the most amazing flavour combinations I have come up with to date. The jam itself is fantastic and this base recipe will be one I use again. I tend to make small batches of jam so that I can enjoy what is in season, and not get bored with the taste.

Following on from my bad service experience at the iStore at Somerset Mall, I went along to Vodacom who is our mobile service provider, to upgrade the modem that we have at home. The slow internet is driving me scatty and Dave told me that it was the hardware that was too old. The young lady who assisted me was amazing. She did not know if the modem was at fault for the lack of high speed internet and so she called over the technician who confirmed Dave’s theory. A new modem was speedily sorted out for me and my upgrade processed. She enquired whether I was getting enough data per month and had me signing away before too long. I went to pay the once off fee for upgrading and she knew straight away that my Diners Card would not work in their machine. I am quite used to this as the fees are much higher for the retailer on the Diners and Amex. Thankfully our bank offers us a MasterCard as an additional card. Not only was she efficient and helpful, she even offered me a bag big enough to take my Ipad. Dave and I left the Mall shortly after, and I decided to set up the new modem on the drive home. I took my sim card out of the old modem, placed it into the new one, inserted the battery and switched it on. I then deleted the old modem off my phone and added the new one on. And there I hit a bump – I was asked for the pin to unlock the sim card. Against all advice, I have one pin for all our sim cards, and so I used that, but it would not work. I tried my second pin option and that also was not correct. At the same time, Dave got a call saying he had to go back to the office. I dropped him off and went back to the Mall. The same sales assistant took the sim card out the modem and checked the pin on it. She then tried that and it would not accept it so she asked me for a pin number so she could put that onto the sim card. Before leaving I put the sim card into the modem, made sure my phone would get on to the internet via the wifi and left the store again, a very happy and satisfied customer.

Strawberry And Lavender Jam
Ingredients
- 200 g strawberries, hulled, cut in half and thinly sliced
- 150 g fructose
- 1.25 mls lavender petals
Method
- Fill a large stock pot with water so that the level will come half way up your preserving jar
- Bring to a boil over a medium to high temperature
- Place the strawberries, fructose and lavender into a large sauce pan
- Bring to a boil over a medium temperature, stirring until the fructose has dissolved
- Crush using a potato masher until the strawberries have broken up
- Keep boiling until the jam has thickened to gel set stage
- Remove from the heat and skim
- Pour the jam into a warm preserving jar, leaving half a centimetre head space
- Wipe the rim of the jar, place the lid on top and screw on the band
- Place the jar into your stockpot
- Leave the jar in the water for 15 minutes
- Remove the jar and place onto a wire rack to cool
Notes
To test for the gel set stage:
place a saucer into your freezer
Place a teaspoon of the preserve onto the saucer
Place the saucer back into the freezer for 1 minute
Push your finger through the preserve, if it wrinkles and holds it is set
