As an excuse to enjoy these more often, I am going to place these almond and cranberry biscuits into the health bracket. These were really moreish, and I could have eaten the entire batch in a few hours, rather than the few days they lasted.

Let’s talk about cranberries

It is only when researching cranberries that I discovered that the dried ones I use are farmed in Canada. This country, together with the U.S. produce nearly all of the fruit consumed worldwide. It explains why the juice I love is no longer available here, and why the blends are so expensive. I drink cranberry juice when I feel like I am getting a bladder infection, but I also need to take care not to drink too much as it could lead to kidney stones, which I suffer from. Other than juice, cranberries are turned into sauces and jams, as well as sweetened and then dried. The process to dry cranberries adds a lot of sugar and eliminates the natural Vitamin C found in the fruit. Fresh cranberries will be sold locally or frozen for distribution and processing.

What about almonds?

Smoked almonds are one of my favourite snacks, closely followed by raw almonds. I prefer mine with the skin on, rather than blanched, where the skin is removed. What we eat is actually the seed of the almond nut. It is protected by an outer shell which is cracked and discarded. Almonds are nutritionally dense and a good source of protein. And if you need another reason to eat them, almonds might even reduce the risk of heart disease by lowering LDL cholesterol levels in the blood. Almonds are found in all sorts of cuisines, being used for both sweet and savoury dishes. And today one can easily find almond butter, almond flour, and almond milk. Moroccans have been blending blanched almonds with milk and sugar for ages. This sharbat billooz has other flavouring added to it before drinking.

Almond And Cranberry Biscuits

Makes enough for: 15 biscuits
All Rights Reserved: An original recipe from Lavender and Lime

Ingredients

  • 112 g butter, softened and cubed
  • 50 g fructose
  • 1 orange, zest only
  • 75 g raw almonds, lightly toasted
  • 75 g rolled oats
  • 75 g flour, plus extra for dusting
  • 38 g wholemeal flour
  • 62 g dried cranberries, roughly chopped

Method

  • Preheat the oven to 190° Celsius
  • Place the butter, fructose and zest into a stand mixer bowl
  • Beat using the paddle attachment until the butter is light
  • Place the almonds into a blender and pulse to chop into small pieces
  • Tip into a bowl, add the oats and flours and mix together
  • Add to the stand mixer bowl and beat on a slow speed until the dough just comes together
  • Add the cranberries and mix to distribute them then turn the dough out onto a lightly floured surface
  • Knead the dough and shape it into a ball then roll out to 5mm thick
  • Use a 7.5cm cookie cutter and cut rounds, re-rolling the dough as necessary
  • Place the biscuits onto a lined baking tray, place into the oven and bake for 18 minutes
  • Remove from the oven and transfer the biscuits to a wire rack to cool completely

  1. It actually does sound like a very healthy recipe to me with the oats, cranberries, and almonds and delicious too. I try not to bake because I tend to do a lot of the eating and it doesn’t look good on me. ha ha!! Interesting information about the cranberries and the almonds. Have a great week.

  2. The dried cranberries we get over here are usually from the states…these biscuits sound and look great. With wholemeal, nuts, oats…these would be great for breakfast on the go too.
