When I was sent a signed copy of The Family Meal: Home Cooking with Ferran Adrià, I was immediately drawn to the recipe for Crema Catalana. The book contains the meals he fed his staff at elBulli and from these, Dave and I have chosen one entire meal to make. A lot of the ingredients are not available in South Africa, so I will gather them when we go to the UK in June. Until then, I am sharing this amazing dessert with you.

Like most people, I find adverts intrusive. I use AdBlock on Chrome and when I bought my iPad I did a lot of research to find an App that would block adverts across everything I use. I came across Weblock which worked like a charm for years. But in December it stopped working on some of the Apps I use daily. It became so intrusive that I even stopped reading some blog posts on my iPad. And my daily Merge Puzzle started driving me dilly as the adverts slowed the game down, and even interfered with it. I read that Apple had actually pushed Weblock out of the updated IOS, ensuring it did not work. After much research and reading I discovered that there is an AdBlock App that purports to block out all adverts across all Applications.

There was a cost involved, but not too much to sway me from downloading it. I followed the onscreen prompts but it seemed not to work. Before doing anything drastic, I sent a support mail requesting help. My inclination was that I had not done the setup correctly. After getting no reply, I offloaded the App and reinstalled it. This time, it downloaded DNS rules that it had not done on the initial setup. The AdBlock now does what it says on the tin across all the applications I make use of on both my iPad and iPhone. The small cost was totally worth it as I am not not distracted or frustrated by adverts. And ever better, I don’t need to do a setup each time I sign on to a new Wi-Fi network. And it has a built in VPN for my protection. Do you use an ad blocker, and if so, which one?

Crema Catalana
Ingredients
- 250 mls milk
- 60 mls whipping cream
- 1 strip orange peel
- 1 strip lemon peel
- ½ thin quill cinnamon
- 0.625 mls fennel seeds
- 0.625 mls vanilla powder
- 3 egg yolks
- 45 g fructose
- 5 g cornflour
- sugar for sprinkling
Method
- Place the milk and cream into a large saucepan
- Add the orange and lemon peel, cinnamon, fennel seeds and vanilla
- Bring the mixture to the boil over a low to medium temperature
- When close to boiling, place the egg yolks, fructose and cornflour into a large mixing bowl
- Whisk until smooth then strain the boiling milk into the mixture, whisking continuously
- Pour into a clean saucepan and cook over a medium temperature, whisking continuously, for 10 minutes
- Pour into a heatproof dish and leave to cool
- Sprinkle an even layer of sugar over the top and use a blowtorch to caramelize the sugar *
- Leave until the sugar has set before serving
Notes
* If you don’t have a blow torch, make a caramel on the stove top and set it on baking paper. Crush into pieces and scatter over the top.

Hi Tandy, I don’t use an ad blocker because I don’t even notice them. I’ve always been able to block out distractions when I do things including noise and teachers telling me to put my book away [haha]. It is a useful skill. Thanks for this recipe.
I can block out music, and most the TV when I am reading. But the adverts on a lot of blogs are intrusive.

I run 2 different browsers, one with an ad blocker that I use most of the time and the other without that I use for some specific functions and when I need to check out ads for some reason. The dessert looks wonderful, like a twist on creme brulee, which I love!
