Fluffy eggs is what I called these eggs in meringue clouds as the whites were all fluffed up. I like my egg yolks to be runny but if you prefer yours hard then keep them in the oven a little longer. Enjoy on the weekend when you have time to bake.

Do you ever have one of those days when you sit down at your desk, ready to start your work and one thing goes wrong? And with that, your routine flies out of the window and you just cannot get into the swing of things? This happens to me on a regular basis. I am not sure what it is about routine that works for me but I just seem to be a happier person when my day starts off and continues in the way I am used to. My weekday mornings begin with coffee in bed while I read blogs, followed by getting ready for work and then getting to work. At the office I start off with clearing my emails and then replying to blog comments. This should all be done by 8am and then I get stuck into the things that pay the bills.

I get the driver sorted out and ready for his day, make sure the sales side of the business is running smoothly and then I get to the papers on my desk. Once this is done I can write a blog post, edit photographs and see what is happening on Facebook. It was while reading a blog post one morning that I saw a recipe for eggs in meringue clouds on We Are Not Martha, and decided to break with my weekend breakfast routine and make these for myself while Dave was away. It is quite strange taking eggs apart and putting them back together, but really fun to do. I posted a photograph on Instagram and only then remembered I had not typed the recipe up, or taken camera pictures. So, I made them again for both of us one weekend and Dave really enjoyed them.
Fluffy Eggs
Ingredients
- 4 rashers streaky bacon
- 4 eggs
- Salt and freshly ground black pepper to season
- 40 g grated cheese
Method
- Preheat the oven to 230° Celsius
- Place the bacon into a cold frying pan
- Place onto a medium to high temperature and cook until to your liking
- Remove from the heat, slice and set aside to cool
- Once the oven is preheated separate your eggs
- Place the egg whites into a mixing bowl
- Place each egg yolk into a separate container - I used egg cups
- Season the egg whites and whisk until firm
- Fold in the bacon and cheese
- Spoon 2 portions per person onto a lined baking sheet
- Make them as round as possible, and depress the centre to make a well
- Bake for 4 minutes
- Remove from the oven and carefully place an egg yolk into the centre of each egg white nest
- Bake for 2 minutes
- Season the yolk with salt and serve immediately

These look like fun. I would never have thought of them. We are sticklers for routine during the week because me work for someone else. Weekends are a more relaxed affair with Saturday mornings spent doing a bit of this and that and typically, ‘jobs’ on Sat afternoon. I really depends on what’s in the calendar. Roll on the time when we are ‘working for ourselves’!
Working for yourself has a lot of upsides, and some downs as well!
