Eggs feature as our breakfast each and every Sunday. Dave is usually in charge and he makes omelettes, scrambled eggs or frittatas, depending on his mood. I made these green eggs and ham several times so that I could get the recipe just how I like my eggs. The key to getting them out of the tin is to use a silicone muffin pan. If you don’t have one, make sure your muffin tin is well greased.

Green Eggs And Ham
I am a huge Dr. Seuss fan, and taught my cousins to read from The Cat In The Hat. In fact, this was my first introduction to these books, aimed at getting children to read. My reading started with Perry Mason books, of which my parents had plenty. When I started Primary School I was already reading and because of this, I skipped out reading many children’s books. Green Eggs And Ham is about Sam-I-am. He follows an unnamed man, repeatedly asking him if he would like to try some green eggs and ham before the man eventually tries it and likes it. Now, wanting to make my own version of green eggs and ham I came up with the idea of using spinach as the green part. And using the ham as a cup to hold the spinach and the eggs for baking.
Eggs, a complete protein in a shell
When I was vegetarian, my main source of protein was eggs. Despite health warnings at the time about cholesterol, I ate two eggs a day. My most preferred method is an egg that is just hard boiled. I peel these, and gobble them down! I am also partial to plain scrambled eggs. My method to make these has not changed since I showed my cousins how to make them. I break two eggs into a bowl, add a pinch of salt, and whisk until completely slackened. A dollop of cold butter is placed into a cold frying pan, and the eggs added to it. The frying pan is placed onto a medium to low heat, and as soon as the butter starts to melt, I start whisking. This results in the perfect scrambled eggs, which can be elevated with a dash of cream.

Green Eggs And Ham
Equipment
- 1 silicone muffin pan
Ingredients
- 200 g baby spinach
- salt and freshly ground black pepper to season
- 15 mls cream
- 4 slices wafer thin ham
- 4 eggs
- toast to serve
Method
- Preheat the oven to 180° Celsius
- Rinse the spinach, shake off the excess water, and place into a non stick frying pan
- Place onto a medium temperature, and cook until wilted
- Remove from the heat and place the spinach into a colander to drain
- Squeeze out any excess water then return to the pan and add season generously
- Add the cream, and cook on a low temperature until nice and creamy
- Turn off the heat and set aside
- Line 4 holes of a silicone muffin with one slice of ham per hole
- Place a tablespoon of the creamed spinach into each hole
- Crack an egg into each hole and season generously
- Place the muffin pan onto a baking tray, and place into the oven for 20 minutes
- Remove from the oven, and remove the green eggs and ham from the pan
- Serve with toast and the rest of the leftover spinach (if there is any)

I always liked Dr. Seuss for my kids . They were fun books to practice reading. Green Eggs and Ham was a favorite. Your recipe looks delicious. I used to eat lots of eggs when I was a vegetarian too. Now that I am vegan- I sometimes miss them.
This was the only thing I ate as a vegetarian, other than baked treats 🙂
I have eggs (well, mostly egg whites) often for my breakfast – and this is another great idea, especially for the weekend!
I love egg yolks, so an egg white only anything would feel like a let down to me 🙂
oh yes i am a huge fan of eggs in any and every form! Mr P. has discovered a new way of boiling them (in already boiling water) so they are perfectly done at 6 minutes – nice and soft. These look splendid Tandy! And I adore Dr. Seuss, and often quote him. I too could read before i went to school!
