Lamb Marinade

I think it is always good to have a few marinade recipes one can use for various meats. This lamb marinade comes from the recipe book Mexico in Mzansi which I reviewed in 2024. It can be used for any cut of lamb, but works well with lamb shoulder, and chops.

Stewing in our own mistakes

I am always amazed when I see people blame others for their own short sightedness. Every December, when people get stranded at the airport because of snow, they blame the Government. It is never their own fault for booking a trip without adequate insurance. And if they are stuck in a foreign country for any reason what-so-ever, they expect their Government to come and fetch them. Again, not their fault for booking a holiday without adequate cover. If I were the person in charge, I would just leave them there and let them figure it out. But, the latest saga has me wondering how on earth people think. Passports are valid for 10 years from date of issue if you are an adult. And most countries expect you to have 6 months validity from the day you depart to go home.

Being a responsible traveller

So, surely before you book a flight you check to see if your passport is valid? No airline will let you board a flight if they know you will be denied entrance to the country you are travelling to. The reason for this is because they would have to cover the cost of getting you home. It is the same reason they do not allow travellers whose passport names differ to the name on the ticket! And for sure they will not let you fly without a Visa, if the country you are going to has that requirement. These are all simple things a responsible traveller will check before they travel. And they should not expect the airline to make an exception for them for any reason! Do you know when your passport expires, and how long before it does do you renew it? Lamb Marinade

You can make this in advance and store in the fridge in an airtight container for up to 2 weeks

Makes enough for: 180 mls
All Rights Reserved: Adapted from Mexico In Mzansi page 25

Ingredients

  • 60 mls rose harissa
  • 30 mls olive oil
  • 15 mls coconut sugar
  • 5 mls ground cumin
  • 5 mls smoked paprika
  • 5 mls fine salt
  • 5 mls freshly ground black pepper
  • 4 cloves garlic, peeled and crushed
  • 2.5 mls ground coriander
  • 1.25 mls ground cinnamon

Method

For the marinade

  • Place the harissa, oil, sugar, cumin, paprika, salt, pepper, garlic, coriander, and cinnamon into a bowl
  • Whisk to combine and use as needed

Notes

* If there any any left over, place into a sterilized glass jar, refrigerate and use as needed. See this post on how I sterilize my glass jars.
