Orange And Almond Cake

I love the method that Ellie Goulding has used for her Orange And Almond Cake. An entire orange is cooked until soft, and then used, peel and all. Zero wastage for a healthy sweet treat!

About 15 years ago, my Doctor prescribed an antihistamine with cortisone for when I got sore throats. The idea was that I would take them to stave off Bronchitis. I have to confess I mostly did not take them in time. With the onset of Covid and having recently recovered from Pneumonia I had to change my habit. I decided to take an antihistamine every night. On the upside, I have not had any lung issues for two years. But on the downside, my body has acclimated to the medication. Pre-pandemic, I would take an antihistamine when I had bouts of insomnia. But now the sleep side effects were gone! Last month I discussed this with the Pharmacist. She gave me an antihistamine specifically for sleeping. I read the package insert and it clearly stated that the tablets were not to be taken 2 nights in a row.

Nor should they be consumed if I had any alcohol. That night I took the last of my Allergex, and then on Friday I took a pill to help me get a much needed good night’s’ sleep. I took nothing on Saturday or Sunday night. On Monday I was so itchy. Turns out that this is one of the side effects of antihistamine withdrawal. I found it quite ironic, as this is one of the reasons you would take this form of medication. That night I took another tablet. This time not with the aim to get a decent sleep. But because I did not want to scratch myself in my sleep. For the next week I weaned myself off the antihistamines so that when I really need them, they will work. Do you ever take something just for the side effects?

Orange And Almond Cake

This healthy cake is full of flavour and perfectly sweet

Ingredients

for the cake

  • 1 orange
  • water to cover
  • 3 eggs
  • 1 pinch fine salt
  • 100 g coconut sugar
  • 125 g almond flour
  • 5 mls baking powder

for the topping

  • 15 mls orange juice
  • 8 g honey
  • 5 g flaked almonds

Method

for the cake

  • Place the orange into a saucepan and cover with water
  • Bring to the boil over a medium to high temperature and then lower the temperature slightly and leave to simmer until soft
  • This will take about 2 hours and the skin needs to be soft enough for a wooden spoon to break the skin
  • Remove the orange from the water and set aside to cool
  • When you can handle the orange, break it open and discard the seeds and central white core of pith
  • Place the orange into a blender and blitz until puréed
  • Preheat the oven to 170° Celsius
  • Place the eggs into a large mixing bowl and add the salt
  • Whisk until light and frothy
  • Add the coconut sugar and whisk to combine
  • Add the almond flour and baking powder and mix using a spatula to combine
  • Add the orange and fold in
  • Pour the batter into a lined 20cm baking tin
  • Place into the oven and bake for 40 minutes

for the topping

  • 10 minutes before the end of the baking time place the orange juice and honey into a small saucepan
  • Gently heat over a low to medium temperature, until the honey has melted
  • Remove from the heat and set aside
  • Place the almonds into a non stick frying pan and lightly toast
  • Remove the cake from the oven and brush the top of the cake with the melted honey
  • Sprinkle the almonds along the outer edge and then leave the cake to completely cool in the tin
  • Remove from the tin and store in an airtight container for up to a week
  • Serve with cream if desired

  1. The almond orange cake sounds like a wonderful recipe that uses lots of healthy ingredients, is gluten-free, and perfect for Passover ( will save for next year). I am fascinated about the antihistamine for insomnia. My husband has had difficulty sleeping for 15 years- he has tried sleeping pills ( from the doctor) and doesn’t help at all. Recently he tried CBD gummies- nothing… I’ll have him check with his doc about antihistamines… thanks Tandy.

  2. I see my previous comment didn’t post. I don’t know why. I use antihistamines and I change the brand regularly to prevent my body getting used to it.

  3. I’ve never heard that antihistamine can be used for treating insomnia (But it makes sense because I used to take it often to treat my allergies+asthma, and I would feel horribly drowsy!)
    This cake sounds delish, I love the combination of almond and orange.

  4. I’ve made a couple of orange loaf cakes in recent weeks and was quite pleased. Your recipe is very different and I’m intrigued to try it. I love the idea of using the whole orange. Thanks for sharing the recipe, Tandy.
