This sundried tomato dressing is perfect for any type of cabbage based salad. I make a coleslaw with red cabbage, carrots, and coriander leaves. For the perfect crunch, do not add the dressing too far in advance.

Dressing up
Making a good salad is easy, and simple. But what can take your salad to the next level is the perfect salad dressing. I have made the same basic salad dressing for over 30 years now. Since posting the recipe on my blog, I have reduced the amount of fructose I use. It is still sublime, and a bottle sits on our table at all times. But, a change is as good as a holiday, and when ever I see a recipe for a dressing that catches my eye, I will make it. Dave has salad nearly every day for his work lunch. And we will have salad with our supper at least a couple of times a week. When Sheree posted her recipe for sundried tomato dressing I made it straight away to go with that night’s coleslaw.
Levelling up
I have always maintained that the best step up we can give our children is a good education. This does not have to be scholastic, but it needs to be the best one can afford. Unless you have already established generational wealth, this can be a great levelling up tool. A good education can mean a better job, and a better job can lead to growth and a decent salary. All of this can put our children on the path to buying a house and becoming financially independent. It should not matter what our children do to earn a living wage, what should matter is how much disposable income they have. Because that is what will help them put their children on a path to a better future. Given the chance, I would contribute to that generation getting the best start in life they can get. And hopefully that way create generational wealth.

Sundried Tomato Dressing
Ingredients
- 240 g pack sundried tomatoes, preserved in vinaigrette
- 70 g thick yoghurt
- 30 mls water
- 1 clove garlic, peeled and roughly chopped
- salt and freshly ground black pepper to season
- 200 g coleslaw
Method
- Drain the sundried tomatoes, reserving the vinaigrette
- Add 55g sundried tomatoes to a blender, together with 60mls of the vinaigrette, the yoghurt, water and garlic
- Season to taste then blitz until smooth
- Add to the coleslaw, mix to combine, adjust the seasoning and serve

We have salad 3 to 4 times a week and this dressing would elevate our salads so much – thanks for this recipe, Tandy. I also feel that teaching children to cook can lead to better choices, even contributing to wealth in time (eating in is so much cheaper here than dining out)…
