So often I will be watching a cooking show, and I will be inspired to make something. Sometimes I let the idea sit for a long time, but in the case of this chocolate caramel mug cake it was a matter of minutes from thought to table. I used a ready made caramel I have in my fridge. It is one of the many ingredients I consider to be a pantry staple.

Making mug cakes to share
I know mug cakes are meant to be for one person. But there is no ways I can eat an entire one to myself. Luckily for me, Dave will always open to sharing. They are the easiest quick fix for when you are craving something sweet. And the sky is the limit when it comes to flavour combinations. The trick to a good mug cake is the ratios. You can use my recipe below as the template for new cakes, getting as creative as your imagination can take you. Be sure to use a microwave safe mug or glass that is large enough for the cake to rise. And be precise with your timings. I use the 900 Watt setting on my microwave, so if yours is different, you may need to make adjustments.

Twenty five years ago, a friend of mine opened her door to the local sheriff. He had come to repossess her car as the payments were not being made. She was a stay at home mom, whose partner assured her he could look after the family financially. Well, nothing was further from the truth. She is not the first of my friends this has happened to. Another discovered her husband was not paying the school fees at the school she worked at, when her salary was docked! Most recently a friend learnt her husband, who told her she had no need to work, has been left in a huge financial crisis. Something she only learnt when he left their marriage. In all three cases, the financial facts were not shared, and it has been the wife who has had to pick up the pieces and pay the bills.

Chocolate Caramel Mug Cake
Ingredients
- 50 g flour
- 23 g fructose
- 6 g cocoa powder
- 1.25 mls baking powder
- 30 mls canola oil
- 15 mls milk
- 2.5 mls vanilla extract
- 1 egg
- 48 g caramel
- 0.625 mls flaked salt
Method
- Place the flour, fructose and cocoa powder into a large microwave safe mug or glass and mix with a fork
- Add the oil, milk, vanilla and egg and using the fork, mix until smooth
- Drop the caramel and flaked salt into the mixture and swirl them in
- Microwave at 900W for 1 minute and 30 seconds
- Take care when removing from the microwave if using glass as it will be hot!

Tandy – you speak of three cases you know where trust led to disaster – well, you actually know four . . . you just may have noticed two rather different and questionable sides to some of the things I have said thru’ the years . . . so, how did those come about? If I told you the tale now, you would not believe the truth in a zillion years ! Getting to your mug cakes – absolutely drool-worthy . . . and tho’ not a dessert eater I could manage a whole one 🙂 !

I have never made mug cake because I don’t own a microwave (and toaster)…yours looks really moist and tasty.
