Using my grill for the marshmallows, I made this toasted marshmallow gelato. It is a churner recipe and the result is the most amazing tasting treat.

Eating marshmallows
I am sure we all have childhood memories of toasting marshmallows on an open fire. For me, there is one specific memory that takes me to my early twenties. I went with a friend to a braai. This was in my days of being a vegetarian, and not eating much else, other than sweet things. My awful daily diet was usually pizza for breakfast, chocolate eclairs for lunch, and chocolate mousse for supper. Snacks were eggs which I loved, and anything salty and crunchy. At the braai we went to there must have been crisps, and for sure there was lots of alcohol. In order to feed me, my friend toasted a gazillion marshmallows and that is all I ate. For years I could not go near them, but that changed when I started making desserts using sugar free marshmallows.
Toasted Marshmallow Gelato
The reason I turned to a sugar free diet was because I had developed an intolerance to sucrose. After years of getting calories from sugar, my gut was overwhelmed. It took a decade for my body to finally adjust and put back the weight I had lost due to my body not being able to digest sugar properly. And another decade of careful eating and taking chromium before I could eat sugar without adverse effects. I made my toasted marshmallow gelato with sugar loaded marshmallows, but still used fructose as that is what I am used to. This recipe requires an ice cream churner, and according to all my taste testers is divine!

Toasted Marshmallow Gelato
Equipment
- ice cream churner
Ingredients
- 90 g marshmallows
- 260 mls milk
- 80 g fructose
- 4 egg yolks
- 0.625 mls fine salt
- 500 mls whipping cream
Method
- Preheat your grill to a medium to high temperature
- Place the marshmallows onto a lined baking tray and place under the grill for 5 minutes
- Turn using tongs than have been sprayed with cooking spray, and grill for another 5 minutes
- Remove from the oven and set aside
- Place the milk into a saucepan and bring to a simmer over a medium temperature
- Place the fructose, egg yolks and salt into a mixing bowl and whisk until pale
- Remove the milk from the heat and pour half of the milk into the egg yolk mixture, whisking continuously, until combined
- Pour this mixture into the saucepan and place back on the heat
- Use a wooden spoon and stir the mixture continuously until it starts to thicken
- Turn the heat off, and with the saucepan on the stove, add the marshmallows and stir until completely melted
- Place the cream into a mixing bowl and add the anglaise
- Whisk to combine then strain the mixture into a jug
- Place the jug into the fridge overnight, covered with cling film
- Remove the jug from the fridge and whisk the anglaise
- Set up your ice cream churner, add the anglaise and churn as per the manufacturers instructions
- Place into a freezer proof container and freeze for at least 4 hours before serving
You might notice that I am only sharing one photograph of my recipe. I have exceeded my disc space on my blog, which is a ‘side effect’ of having done this for so long. I will be going back and editing every blog post to cut down on the space I am using. At the same time I will be cleaning up my media file. This is one aspect of blogging I do not enjoy.

What an interesting reaction to you unhealthy diet. I would have just expected a big weight gain. A lovely sounding recipe.

this sounds really good Tandy. Speaking of diet, i didn’t know for many years that i was lactose intolerant so i had constant upset stomachs. Not good. and then i found out my recent terrible stomach aches were from soy milk – after drinking it for decades!
Wow, who knew soy milk could do that? Have you tried goats or sheep’s milk?
I use oat milk and occasionally almond milk these days.
Do you get macadamia nut milk? Mark’s partner says it is really good 🙂

What a great recipe! It looks and sounds delicious. Your vegetarian diet sounds disastrous. Hope you were not eating that way for too long.
