These chocolate flapjacks get a double dose of chocolate from the boozy sauce. You can even amp up the chocolate aspect by adding chocolate chips to your batter.

What is a flapjack?
Well, if you live in the United Kingdom, this word will mean something totally different to you than it does to me. There, a flapjack is an oat slice that is baked in a flat tin and then cut into squares or rectangles. Using rolled oats, butter, sugar and syrup, I would call these a crunchie. And in America, these are known as granola bars. In South Africa, we call American pancakes flapjacks. And I differentiate by using the word ‘American’, as a pancake to us is what the French call a crêpe. These hotcakes, griddle cakes, or drop scones, are made from a batter and then cooked on a hot surface. Funnily enough, to make mine, I use a cast iron crêpe pan. It is basically a batter bread made using flour and milk and is leavened with baking powder.
Making the chocolate flapjacks
Hilary Joshua is the name behind this recipe in The Great Marula Menu. Before I even met her, I knew I was going to make these. I mean, who can resist chocolate flapjacks? And hers are served with a boozy sauce. I could have eaten the entire batch of these, and I only made half of her recipe, as we did not need to indulge in 18 flapjacks. I will share the recipe for the sauce, but please keep in mind that it didn’t work out for me.
Split chocolate
At first I was not sure if it was the recipe itself that was a failure. I had my doubts about that, as I know each and every recipe was tested. But the chocolate split. At first I thought it was because I used the microwave to melt it. However, the very next recipe I tested ended with the same results. There appears to have been a change in the formulation of the chocolate I am using. If this happens to you, it is easy to remedy! Take some warm milk and slowly whisk it into your chocolate until it comes together again.

Chocolate Flapjacks
Ingredients
for the flapjacks:
- 104 g flour, sifted
- 20 g cocoa powder, sifted
- 20 g fructose
- 5 mls baking powder, sifted
- 250 mls buttermilk
for the boozy sauce:
- 62.5 mls cream
- 150 g dark chocolate drops roughly chopped
- 15 mls Amarula *
Method
for the flapjacks:
- Place the flour, cocoa powder, fructose and baking powder into a mixing bowl
- Give a quick whisk to combine then add the buttermilk
- Stir gently to combine keeping in mind that lumps are better than an overworked batter
- Set aside to rest for 5 minutes while you heat a smooth griddle pan that has been sprayed with cooking spray over a medium temperature
- Using a 30ml measure, spoon the batter onto your pan, doing about 3 or 4 at a time
- Cook for 2 minutes per side and repeat until they are all done
- Set aside under a dish towel to keep warm while you make the sauce
for the boozy sauce:
- Place the cream into a small saucepan and bring to a simmer over a medium temperature
- Place the chocolate into a bowl and add the cream
- Stir until smooth then add the Amarula and mix well
to serve:
- Stack the flapjacks onto plates, and pour the sauce over them **
Notes
** Use any leftover sauce as a topping for ice cream, or to make adult milkshakes. The sauce will keep well if kept in the fridge in a sterilized glass jar. See this post on how I sterilize my glass jars.

I always melt my chocolate in the microwave. the only problem i ever had was licking the knife and then stirring the chocolate so moisture got into it!! I’ve never known what flapjacks are. they are just not a thing here in australia!

Yeah culinary language is a fascinating thing yet it can be confusing. I learned the name flapjack only recently (probably was from your blog) Such delicious flapjacks / pancakes – and I especially love this boozy sauce!
