I like the idea of making calzone when it is just Dave and I for supper. I can fit two of them onto my pizza stone. And we can then choose our own fillings.

Last month Dave and I had a very traumatic week. It began on the Saturday afternoon with a loud cry from our Pointer puppy. I eventually found Holly in the cottage shower, trying to hide from Scarlett. Our Boxer is usually a very docile dog, and Holly tries to get her attention by biting her hind legs. I was not surprised to see that Scarlett had nipped her and thought very little of it, as Holly had scared her off. Sunday morning started off horribly. Molly, our very small Jack Russell was attacked by Scarlett. I don’t know what started it as it was dark, and we were snoozing. I managed to stop it before it got bad and Scarlett seemed shocked that she had done this. I stemmed the bleeding and Molly spent the rest of the day sleeping in the garage.

She stayed there on Sunday night and by Monday she was back in the house. She slept in the lounge, as far away from Scarlett as possible but Tuesday things were back to normal. They both slept upstairs, next to each other and even though Molly was wary, she had stopped trying to bite Scarlett every time she came near her. Wednesday however was a shocker as Scarlett again went for Molly. I got her off Molly before any real damage was done but the poor dog was now terrified. And that terror must have caused Scarlett to go crazy on Thursday. She attacked Molly so badly that we had to rush her to the vet. Dave took her and made the tough decision to put her down. Whereas she might have survived the physical part of what happened, I doubt she would have recovered mentally.

Calzone
Ingredients
for the calzone
- 400 g flour
- 7 g instant dried yeast
- 5 mls fine salt
- 5 mls xylitol
- 225 mls water
- 30 mls olive oil
- Semolina for dusting
filling suggestions
- mozzarella cheese, grated
- fresh ricotta
- cured meats such as salami or prosciutto
- artichoke hearts, drained and patted dry
- cooked mushrooms
- red peppers, thinly sliced
- tomato, thinly sliced
for the topping
- tomato passata (make your own or store bought)
- olive oil for drizzling
Method
for the calzone
- Place the flour, yeast, salt and xylitol into a bowl of a stand mixer
- Stir to combine then add the water and olive oil
- Using a dough hook, bring the mixture together, then knead for 10 minutes
- Cover the bowl and leave for as long as possible for the dough to prove
- An hour before cooking, preheat the oven to 200˚ Celsius and if you have a pizza stone, place it into the oven while you are heating it up
- Divide the dough into 4 and roll each one out as thin as you can, using your hands to stretch it if necessary
- Place each piece onto a sheet of baking paper, dusted with semolina
- Place a generous portion of mozzarella on one half, then top this with your desired filling, being very generous
- Flip the uncovered dough over your filling and seal properly
- Spoon some tomato passata over the top of the calzone and drizzle with olive oil
- Dust the top of the pizza stone and your pizza peel with semolina
- Place the calzone into the oven and bake for 25 minutes (you can do two at a time on a pizza stone)

HI Tandy, I am sorry to hear about your bad week. You’d better be careful of Scarlett as it sounds like something has made her turn a bit vicious. What a dreadful thing to happen.

oh my god. dog stuff. we have had two little crazy dogs for quite a while, thanks to my daughter, of course. and when we got our bigger puppy, they would attack him. I was more scared of him becoming mean, because with just a few teeth between them, there wasn’t much of a chance of real damage, but still, the trauma. how horrible you had to go through that.
