Chicken And Leek Pie

This recipe for chicken and leek pie comes from Sarah Graham’s Simple Suppers. It is super simple as you use chicken that has already been cooked. That you can buy or be like us and braai a chicken so we can get several meals from it. And it calls for store bought puff pastry. This meal is ready in under an hour making it perfect for a weekday dinner. Serve with a green salad in summer. Or steamed green vegetables in winter.

When necessity prompts action

Years ago we had friends contact us from the airport in Johannesburg to say they were on their way to stay with us. This meant Dave had to go out and buy beds. Due to space restrictions, he bought bunk beds and they happily slept like that for their visit. And so did other house guests while we lived in the cottage. When we moved into the house I knew I wanted to replace them  with two single beds that could be pushed together if necessary. In December 2023 I sold the bunk beds with their mattresses and bedding. And I did not buy new ones until I was forced to. Mark and Eva came to stay for a night in February 2024, and we already had a guest in the other room.

So, off I went to get the single beds I had my eye on. I needed new duvets, linen and pillows as well! And that is how things have stood until now. Next week my friend is coming to visit with her mom. Cynthia will sleep in the larger guest room and Kim will stay in the smaller of the two. To make the visit as comfortable as possible I made the two singles into a king size bed, and bought new bed side tables. I also got some new lamps as the plug points in the bedroom don’t work if the beds are pushed together. The lamps are rechargeable LED ones which can be used if our solar panels are not co-operating and we have a power outage. The room is now completely furnished and all that Dave needs to do is finish the cupboards.

Chicken And Leek Pie

This is a great meal to make during the week as it uses ready cooked chicken

Makes enough for: 4 people

Ingredients

  • 15 mls olive oil
  • 6 baby leeks, trimmed and thinly sliced
  • 5 mls dried mixed herbs
  • 1 clove garlic, peeled and chopped
  • 25 g butter
  • 10 mls Dijon mustard
  • 20 g flour
  • 140 g frozen sweetcorn kernels
  • 60 mls cream
  • 240 g cooked chicken
  • 200 g roll, puff pastry
  • 2 sprigs fresh thyme, leaves picked

Method

  • Preheat the oven to 180° Celsius
  • Place the olive oil into a frying pan and heat over a medium temperature
  • Add the leeks and cook until they start to soften
  • Add the herbs and garlic and cook until fragrant
  • Add the butter and mustard and stir until the butter has melted
  • Add the flour and stir to mix, and leave to cook for 1 minute
  • Add the corn and the cream, stir to combine and lower the temperature
  • As soon as it starts to bubble, turn off the heat and leave it to cool *
  • Add the chicken and mix to combine, then divide the mixture between 4 cocottes to make individual pies **
  • Using the lid from your cocotte, cut out 4 circles of pastry
  • Place the pastry lids over the top of the cocottes and press down using a fork to seal the edges
  • Trim the edges and make a slit into the top of each pie
  • Place the cocottes onto a baking tray and place the baking tray into the oven and bake for 30 minutes
  • Remove the baking tray from the oven, place each cocotte onto a plate, scatter the tops with the thyme and serve

Notes

* The recipe called for stock which I did not add, but if you think the sauce is too thick, add vegetable stock to loosen it.
** Do not overfill the cocottes.

  1. a roll of puff pastry? we have single sheets here, already rolled and frozen. Very handy. Yes we have had to buy various beds and linen over the years for our varied guests. We are down to one queen bed (ours), one queen for guests and one single one in my study. Your pie looks divine!

    1. We also get sheets here, and the rolls, both already rolled and frozen. The sheet ones are way more expensive for some reason! Nice to have a bed in your study if you feel like taking a nap, and no-one knowing about it 😉

  2. Your pie looks so delicious Tandy, and I have two large leeks in my vegetable crisper which I could use in this pie. I love this combination of flavours. I’ll be making this, being a cold Winter at present. Yes visitors always require a good look at the sleeping arrangements. You’ve made me think though about the feasibility of two single beds and pushed together to form a King size bed. Pauline (Happy Retirees Kitchen)
