I love chicken, done any way, and with bacon it can only be good! The creaminess of the mushrooms and the saltiness of the bacon makes this dish of Chicken Stuffed With Mushrooms perfect in my mind. The photograph really does not do this meal any justice. If you are reading this blog post I can tell you that the photograph was taken with a cell phone. It was at a time when I did not think that the picture mattered that much. To me it was all about the recipe. I was trying to blog every day. Which is really impossible when you have a full time job. Dinner at our house is usually this simple during the week because of work. I like to be fancy without being complicated. Chicken is therefore a good go to meal for us. And as I always have bacon in the fridge as well as mushrooms, this dinner was a natural progression for me. I love the contrast of the crispy bacon with the soft mushrooms. And as long as your chicken is moist, this meal is a winning dish.
Chicken Stuffed with Mushrooms, Wrapped in Bacon
Ingredients
- 2 chicken breasts, skinned and boned
- 8 rashers streaky bacon
- 250 g mushrooms, sliced
- 15 mls olive oil
- 30 mls crème fraîche
- black pepper to season
- 1 handful flat leaf parsley, roughly chopped
Method
- Preheat the oven to 180° Celsius
- heat the olive oil in a pan and fry off the mushrooms
- season with black pepper
- add the crème fraîche and heat through
- add the parsley
- take off the heat and allow to cool slightly
- lay the bacon on a piece of cling film, 4 slices per breast
- lengthen the bacon with the back of a knife
- place the chicken breast on the bacon
- season with black pepper
- place 1/3 of the mushroom mixture in the middle of each breast
- roll up tightly
- seal the bacon in the pan and then transfer to the oven and bake for 25 minutes
- serve with the rest of the mushrooms

Hmm this looks supreme. Now for the instructions from you to debone the chicken breast.
one day I will do a post on that – in the meantime, Woolworths sells them boned which works best for me 🙂
Used the ingredients recipe, but once wrapped in bacon, seal the ends of the cling film with the chicken & bacon inside by rolling and holding each end of the cling film, and cooked in a pan of hot water for 20 minutes. Then crisped up the bacon in a frying pan with a knob of butter a table spoon of oil. Yum!
