Biscuits are a weekend must have to go with the countless espressos we drink. I made several batches of these chocolate pistachio biscuits to ensure I got the perfect level of crispness.

Being influenced by trends

The first time Dubai chocolate appeared on our shelves I looked no further than the hefty price tag. It started off at a whopping R1000 (€48) and then dropped to R399. I had no idea why any bar of chocolate could be that pricey. I then looked at the ingredients and that still did not explain it. Milk chocolate is nothing special in my opinion, and even though pistachio cream is expensive, tahini and phyllo pastry is not. I then realized that this chocolate, which was created in 2021, became so pricey because of social media influencers. In 2024 Tik Tok videos went viral, and now it seems everyone does a version of Dubai chocolate. And the blogging world is rife with recipes to make your own at home. I am not going to go that far, but using the flavours I love, I made chocolate pistachio biscuits.

Being influenced by stereotypes

In our modern society should we be influenced by stereotypical roles? I have a friend who is married with two children. She and her husband work full time, but the household chores have always been her responsibility. She gets home from work and still cooks a meal for dinner. And over the weekends it is up to her to clean the house, do the laundry and sort out the grocery shopping. Another couple we know has a role reversal. The husband does the shopping and cooking as well as being responsible for the child’s care. I am sure he is not alone in the bath and bedtime routine. I don’t judge either of these situations, but I know that the latter has been judged by his in-laws. They feel that roles in the home are based on stereotypes, and that their daughter should be bathing their grandchild.

Chocolate Pistachio Biscuits

The longer you leave the dough in the fridge, the crispier these biscuits will be

Makes enough for: 28 biscuits
All Rights Reserved: An original recipe from Lavender and Lime

Ingredients

  • 200 g butter, softened
  • 100 g fructose
  • 2.5 mls vanilla extract
  • 300 g flour
  • 50 g dark chocolate, roughly chopped
  • 50 g raw pistachios, roughly chopped

Method

  • Place the butter, fructose and vanilla into a stand mixer bowl, and whisk until pale and fluffy
  • While whisking, add the flour one tablespoon at a time, and mix until just combined
  • Add the chocolate and pistachios and beat to combine on a low speed
  • Divide the dough in half and place each half onto a piece of cling film
  • Wrap each piece tightly in the cling film and then roll into a sausage shape, 5cm in diameter
  • Secure the edges of the cling film then place into the fridge for a minimum of three hours (overnight is better)
  • Remove one of the batches of dough from the fridge and leave to soften slightly
  • Unwrap the dough and cut the log into rounds 1cm thick * and place the biscuits onto a lined baking tray, well spaced apart
  • Place the tray into the fridge while you preheat the oven to 180° Celsius
  • Place the tray into the oven and bake for 20 minutes
  • Remove the tray from the oven, transfer the biscuits to a wire rack and leave them to cool completely
  • You can make the second batch straight away, or leave them in the fridge and bake them when the first batch have been devoured **

Notes

* If you make them thicker, the biscuit will not be as crispy and the nuts will not roast as much.
** The dough is easier to work with if left in the fridge overnight to rest. This way, the flour is properly hydrated and the gluten has relaxed. The biscuits will spread less, the longer the dough is left in the fridge.

  1. The hype behind Dubai chocolate is way overblown, but I’m here for the renewed pistachio enthusiasm it’s brought with it. More pistachios, please! I’m all about your cookie interpretation too; simple and simply brilliant.

  2. Always a good idea to put the dough in the fridge for a bit 🙂 I think partly the cost of Dubai chocolate is due to the increase by 300% of cocoa beans, and also the shortage of pistachios! And yep those darn influencers … !

Hi Tandy, your sablés sound super delicious and such a refreshing change from the “Classic Dubai Chocolate” When it first came out 2 or 3 years ago no one wanted to try and I felt that over the last 18 months it has boomed.   4. Tandy, I had the exact same thoughts as you on the Dubai chocolate- Why is it so expensive ?? I’ve been tempted to try it, but it doesn’t sound special and I’m not paying the price. so there!!! Anyway pistachios and chocolate are match that we love. Thanks for the recipe.

  5. Hi Tandy, thanks for this yummy recipe. As far as I’m concerned, in general equality for women has translated into a full time job in the home and a full time job outside the home. There are exceptions but that is not the norm. Women usually draw the short straw in life and I am glad I have two sons.
