I nearly forgot, today is Tandy Tuesday. I would not like to leave anyone wondering what the pasta meal of the week is. This Chorizo Pasta dish was made before I got my tripod and my light, and I can really see a difference. I would love to be cooking during the day to get that perfect photograph but that isn’t going to happen. I know one thing for certain, this blog is about recipes, and here is another comfort pasta dish containing chorizo.
Pasta to me is one of the most simplest meals to cook. You really need very few ingredients to make the perfect comfort dish. The aim behind Tandy Tuesday was to use 5 ingredients for the pasta sauce. In Italy this would be considered more than enough. The Italians also do not drown their pasta in the sauce. It is just meant to be a hint, and enough to only just coat the pasta. Keep in mind that for Italians, this is part of a meal. Pasta is enjoyed after the antipasti course, and before the main meal. It is referred to as primi piatti or the first course.
Chorizo Pasta
Ingredients
- pasta of your choice
- 15 mls olive oil
- 1 leek finely sliced
- 2 cloves garlic crushed
- 1 chilli left whole
- 125 g tomatoes chopped
- 2 Chorizo sausages sliced
- 15 mls tomato paste
- 50 g Parmesan grated
Method
- get your pasta started
- heat the olive oil and cook the leek until it is soft
- add the garlic and the chilli
- add the tomatoes, the Chorizo and the tomato paste
- when the pasta is cooked, remove the chilli
- toss the pasta through the sauce
- garnish with the Parmesan
