My friend Chantelle gave me the idea to use edible flowers when making biscuits. You can leave them off these cinnamon biscuits if you want to, but they sure do look pretty.

Dave and I recently took a few days off work for a staycation. On the Sunday afternoon we stopped to put fuel into the car. The reason for choosing that petrol station is because we get loyalty points and extra air miles with that brand. The young lady put the nozzle into the car and then proceeded to wash the windscreens. When she was done, Dave paid for the petrol but she could not get the loyalty points to load. We then drove off and headed 10 kilometres down the road to where we were spending the night. The following morning our plan was to take a drive down a long dirt road to the coast. There are no petrol stations along the 150 kilometer journey so we had to leave with enough fuel in the tank to get us there and back.

Ten minutes into the drive Dave looked at the fuel gauge and told me something was wrong as it still showed as being empty. Knowing this is impossible we turned around and drove back to the petrol station. The manager was extremely polite, and asked us to please sit and have coffee on the house while they examined the footage. They had the time stamp from the card charge so that was simple enough for them to look at the tapes. Despite the nozzle being taken off the pump, the previous transaction did not clear. So they had a double charge and we had no fuel. The duty manager saw this when she cashed up and they were grateful we had returned. The petrol was put into the car. And we were sent on our way with a full tank and a packet of biscuits.

Cinnamon Biscuits
Ingredients
- 60 g flour, plus extra for dusting
- 5 mls baking powder
- 2.5 mls ground cinnamon
- 1.25 mls bicarbonate of soda
- Pinch of salt
- 22 g fructose
- 30 g butter, cubed
- 30 g honey
- edible flowers for decorating
Method
- Preheat the oven to 160° Celsius
- Sieve the flour, baking powder, cinnamon, bicarbonate of soda and salt into a large mixing bowl
- Add the fructose and stir to combine
- Rub the butter into the dry ingredients to form crumbs
- Place the honey into a microwavable bowl and heat for 30 seconds
- Pour into the flour mixture and mix to form a stiff dough
- Divide the dough into 8 and roll out into balls
- Place onto a lined baking tray, allowing for spreading, and press flat
- Press flowers into each biscuit, as many or as few as you want
- Bake for 12 minutes then remove from the oven
- Leave to cool on the tray for 5 minutes before transferring to a wire rack to cool completely
- Store in an airtight container

Wow! That really does make the cookies pretty. I’ve never thought to use dried flowers like this! Years ago I catered a friend’s wedding, and I found cookies made with fresh rose petals. they were made almost like cinnamon rolls – you could see the twirls of rose petals. really pretty. i don’t know what made me think of that, cause it has nothing to do with your cookies!
Oh, it does. Something so similar and has inspired me. I have lots of fresh edible flowers to play around with.
