Guacamole is an avocado based dip, commonly found in Mexican cuisine. To me, this is a great way to use up an abundance of avocados. And is perfect for serving with vegetables as crudites. Or as I have done here, with corn fritters.

While I was in the bank, the teller and I were discussing our masks. I told her that wearing mine causes my glasses to fog up. This is a problem for me as I need my glasses to read. She told me the reason my glasses were fogging up was because I did not have my mask fastened tight enough. So, the next day I ensured that it was secure and as close to my skin as possible. I put my mask on in the car, and went into the Mall to do my shopping. This takes much longer now as you have to wait in queues to get into each shop. I probably had my mask on for a total of five hours. I took it off to eat lunch and when I was in the car, driving between shops.

But by the time I got home I had a headache. I am not sure if it was from breathing in my own recycled air. Or because the mask was so tight around my head. But whatever caused it, I was physically exhausted. I had one more errand to run and chose to walk the half block to make the collection. I did not tie the mask on the bottom and let it hang loose so I could breathe. That coupled with the fresh air cleared my head straight away. I have now decided that I am going to wear my mask like that all the time. Being able to breathe easily and not have a headache far outweighs my need to have clear glasses. My next step might just in fact be contact lenses! How do you wear your mask, if you have to wear one at all?

Guacamole
Ingredients
- 200 g avocado pulp
- 20 g fresh coriander, roughly chopped
- 10 g green chillies, finely diced
- 15 mls lime juice
- salt and freshly ground black pepper to season
Method
- Place the avocado, coriander, chilli and lime juice into a mixing bowl
- Stir to combine and season to taste
- Serve straight away

Wearing glasses certainly has its challenges, but I find that wearing contact lenses did as well, particularly in air conditioning which was very drying on my eyes. Thankfully we are not needing to wear masks here in Queensland, I hope a second wave doesn’t eventuate. I love guacamole and corn and zucchini fritters, however I have never served them together. I have such a deep love for guacamole!
This might sound odd, but as a child (I became a vegetarian at the age of six), my life was one long parade of cheese, tomatoes and baked beans on toast. I was desperate for variety. I remember going to visit some friends we used to play with. Their mother was a great cook and she made beautiful vegetarian chillies and curries. I used to watch her cooking in fascination. I was just too young to try out some of the dishes she made. But one day she taught me how to make guacamole. I was so glad to discover avocados! For a long time they were my favourite food as they brought the much longed for change of flavour I was longing for.
Later I discovers all sorts of other things, chickpeas, hummus and started experimenting with herbs, pulses and all sorts of vegetables.
But I will never forget the joy of finding there was life beyond cheese, tomatoes and baked beans!!!

I only wear a mask when I have to…It’s very hot here in Spain and you quickly get over-heated, But needs be! The dip sounds inviting Tandy. Thank you.

Unfortunately, if someone in your space really was contagious and exuding a lot of droplets, you would be increasing your risk by having free circulation of air. What a mess!
Do your Mexican restaurants sometimes have a big production of making guac at table-side? It can be fun. They start with whole avocados and use a big rough stone mortar called a molcajete to pulp them. Everything is done with a flourish! If I recall, when the avocado mash is ready, they ask you which additional ingredients you want them to incorporate.

I have the same problem with my glasses; as you point out, it’s a minor inconvenience.
Ten years ago I would have never tried guacamole, but now I love it. And my wife just made a great batch the other day…

Between a hearing aid, a mask and sunglasses, sometimes I can’t think! In any case hope you are doing well. It sounds tough over there right now…but nothing a little guacamole won’t cure! I HOPE!

I wear a mask at work in the tourist office. Put it on when someone enters and take it off when they leave. I also have perspex between them and me!!
You cannot be too cautious.
My mask fogs up my glasses too. Guess I WON’T try tightening it now 🙂 !
