Orange Cake

At the time I made this orange cake, blood oranges were not in season. I decorated it with grapefruit slices just for the pretty aspect. But, if I made it again I would do so with red fleshed oranges, as so far, they have been the best choice this season.

When things do not go to plan

Dave needs a new battery for his laptop and wanted to get it installed before we went overseas. He confirmed with the company he had used before that they had stock. And on the morning he planned on going there he let them know what time to expect him. We arrived in Cape Town just after lunch and Dave was told it would take an hour as the technician was busy with another battery replacement. We went to have coffee and by the time we got back, the gentleman had started with Dave’s replacement. However, the battery he installed was faulty, so he had to try another one. That too was corrupt, and they had no more in stock. An hour later we left, with the old battery back in his laptop. Our next stop was Canal Walk for my shopping.

Citrus fruit in season

I decided to get a new pair of sneakers for our trip, and I wanted ones without laces that need tieing. Skechers do a slip in, vegan upper shoe, that looked ideal. But, as our local shops don’t keep an extensive range I had to go to Skechers to get them. Sadly for me, they did not have my size! So, another wasted trip. I did however send Dave shopping while I went to look at the Skechers, so at least one thing was ticked off our list. He however was very disappointed in the choice of citrus fruits that were on offer. They were in peak season at the time, but all he could get was a large tray of easy peelers.

Orange Cake

Use any oranges that are in season to make this
Recipe Category: Baking, Dessert
Makes enough for: 1 cake
All Rights Reserved: Adapted from Klein Jan page 221

Ingredients

  • 420 g flour, sifted
  • 17 g baking powder, sifted
  • 1 g fine salt, sifted
  • 200 g fructose
  • 3 oranges, zest and 250mls juice, plus a few orange slices to decorate *
  • 60 mls canola oil
  • 1 egg

Method

  • Preheat the oven to 180° Celsius
  • Place the flour, baking powder and salt into a stand mixer bowl and whisk to combine
  • Add the fructose and give it another whisk
  • Place the orange zest, orange juice, oil and egg into a mixing bowl and whisk to combine
  • Add to the dry ingredients and whisk until smooth
  • Pour the batter into a lined loaf tin and place into the oven to bake for 60 minutes
  • Remove the tin from the oven and place onto a wire rack to cool
  • When the tin is cool, tip the cake out and decorate with some oranges slices

Notes

* you will see I have used grapefruit slices as the recipe called for blood oranges to decorate and they were not in season.

  1. I would like to try this recipe. I love blood oranges too very much. They will come in the supermarket in end of December. Now I would take this Grapefruits mixed with normal oranges. And I take it in the Muffin forms…

  2. Perfect for tea! I bought some organic oranges last week…3.7euro for a kilo..I was like what? And I just wanted the skins…anyway, this week the whole market was loaded with citrus fruit..and so much cheaper.

  3. I would love a slice right now Tandy, It looks delicious. I’ll have to keep an eye out for blood oranges, haven’t seen them, think they might be finished here.
