Overnight Tzatziki

Tzatziki is a traditional Greek dip served with grilled meats. I made my overnight tzatziki simple in taste so it would not detract from the delicate fish I was serving it with.

Dave and I tend to plan ahead when making our holiday bookings. We decide on a place we want to be usually more than a year in advance. Next year April we are starting our holiday in Rome. We are then going to Sardinia and from there we go to France. Our airline of choice when flying into Europe is always Air France. We book as soon as the flights open which is about 11 months before we travel. Our flight next year is fairly complicated and at the time of booking it was cheaper to fly with a layover in Johannesburg on the way there and back. Air France fly direct from Cape Town to Paris during certain months of the year. The direct flight leaves Cape Town later than it leaves Johannesburg which would mean arriving in Rome fairly late.

So this was another reason to choose the layover. We are meeting friends in France to spend a week on a barge together. Bev had suggested that the day we get off the barge we head to Giverny as it is where Claude Monet lived and painted. She wanted to visit the Fondation Claude Monet museum and the Musée des impressionnismes Giverny. As the distance from where we collect the car in Strasbourg to Giverny is 570 km I suggested we do the journey in 2 days. With that in mind I booked us back on the evening flight from Paris. However, when I did Bev’s booking she said she would rather skip going to Giverny and get the daytime flight back. I really did not want to spend an extra day in France driving around to kill time before the 23h30 flight.

I contacted Air France and asked them to change our tickets to the day time flight. The lady I dealt with made a note of our requirements, including our seat selection. She could not complete the transaction while I waited on the other end of the phone and offered to call me back with the price of the change. Within half an hour she returned my call, informing me there would be no charge. And she ensured our seat selection stayed the same. This meant we would not have to overnight back from Paris. It also means a comfortable night’s sleep in our own bed! Win/win all around. Another win/win is this overnight tzatziki. Leaving the yoghurt to strain ensures a thick tzatziki which I much prefer.

Overnight Tzatziki

This tzatziki is thick and mild in flavour. You can add garlic and olive oil if you prefer something more traditional

Makes enough for: 1 batch Tzatziki

Ingredients

  • 1/2 Mediterranean cucumber, quartered and seeds removed
  • 5 mls coarse salt
  • 150 g thick yoghurt

Method

  • Cut the cucumber into thin slices and place into a colander
  • Sprinkle the salt over the cucumber and place the colander over a bowl
  • Place into the fridge overnight
  • Put muslin cloth into a sieve and pour the yoghurt into it
  • Tie tightly and place the sieve over a bowl
  • Put into the fridge overnight
  • Brush off any excess salt from the cucumber and put into a bowl
  • Add the yoghurt and mix to combine

    Hi Tandy, this tzatziki looks refreshing and delicious, what a great idea to pair it with fish.
