Peanut Butter And Choc Chip Cookies

My friend Sam told me that her son Handsome loves it when she bakes my peanut butter and chocolate rusks. This was such a compliment for me, as kids are honest to a fault about what they like and dislike. After reviewing The Family Cook Book I decided to adapt her recipe for the oat cookies and make a batch of Peanut Butter And Choc Chip Cookies. I sent a message to Sam asking her if the kids would eat these peanut butter and choc chip cookies and I got a voice message back with handsome saying an emphatic no and Pretty Girl (her daughter) saying yes. With only a 50% positive response to my idea, I left a voice message for my nieces who live in Sydney. Sasha replied telling me that my cookie idea is very good, and gave me ‘permission’ to try it. Nadia who is 3 does not like peanut butter. But she wants sprinkles and stuff and icing! So, these cookies only got a thumbs up from 2 of the 4 children asked, but they got a huge thumbs up from Dave who does not like peanut butter! I suppose next on my list will be cookies made with stuff for the cutest little one who really knows what she wants.

Peanut Butter And Choc Chip Cookies

These healthy cookies can be added to a lunch box for a treat, or saved for afternoon tea.
Recipe Category: Baking, Biscuits
Makes enough for: 1 batch cookies
All Rights Reserved: Adapted From The Family Cook Book page 42

Ingredients

  • 100 g butter
  • 30 g peanut butter - I used chunky
  • 100 g fructose
  • 1 egg
  • 125 g flour
  • 2.5 mls baking powder
  • 175 g rolled oats
  • 150 g dark chocolate, roughly chopped

Method

  • Preheat the oven to 190° Celsius
  • Place the butter, peanut butter and fructose into a mixing bowl
  • Cream until combined
  • Add the egg and mix in completely
  • Fold in the flour, baking powder, oats and chocolate
  • Use an ice cream scoop to measure out the mixture onto a lined baking tray
  • Flatten slightly with a fork
  • Bake for 15 minutes
  • Leave to cool on the tray for 2 minutes
  • Leave to cool on a wire rack

  4. I totally agree with you. I guess that’s why if you look on a kids menu, it’s always chicken fingers and fries. Because they won’t eat anything else!!

    You know Tandy, I saw your post come up on my feed yesterday and I held my breath as I know we have a history of “great minds think alike”. As Dave doesn’t like peanut butter I don’t think he will like my recipe as it is intensely peanut buttery. Lovely post 🙂 xx

  7. My daughter and her friends will eat just about anything I put in front of them – they are not good with giving constructive criticism though. I do love the sound of these PB/chocolate cookies and those PB/Chocolate rusks??? I love rusks – but never made my own – let alone know that they could exist in such a wonderful combo of flavors!
