Pistachio And Honey Tart

From reading Warren Mendes account of his time at Tswalu, I have learnt that we grow pistachios in the Northern Cape. They thrive in dry hot areas and if you have ever been to Sicily you will understand why the finest of these nuts grow there. I buy locally grown pistachios that have already been shelled and always have a bag of them in my pantry. When making this Pistachio And Honey Tart I did not worry to use the finest quality pistachios I could find, especially given how expensive they are.

Why this tart?

When testing recipes from a book I have been sent to review, I try to choose three. At least one sweet, and one savoury, and one that really catches my attention. I am becoming even more specific with what I choose, using the opportunity to invite people over for dinner the same day I am recipe testing. This has proven to be very interesting, with some recipes not working out as planned. I might also choose a recipe on a whim, to satisfy my craving for sweet treats over the weekend. Other recipes are chosen for what they will go with, such as this pistachio and honey tart. I wanted to serve my rose pistachio cheesecake ice cream with a complimentary dessert, and this seemed ideal. Doubling down on pistachio flavour is always a good thing.

Being as ruthless when shopping

I usually only buy homeware items when I need them, and when they are on sale. But, I have recently bought things that caught my eye. I was chatting to my mom and used the time to browse the store and see what I needed. This included things not on my list, such as a new set of mini tongs, new kitchen towels, and a squeegee for the shower. I had to go back the following day to pay for them as the App was not working, and added two cereal bowls and some cleaning cloths to my purchase. These were on my list and the bowls were on sale, so a win-win for me. Do you stick to a shopping list?

Pistachio And Honey Tart

Serve this with whipped cream or ice cream of your choice

Makes enough for: 1 tart

Ingredients

for the pastry:

  • 300 g flour
  • 50 g fructose
  • 150 g salted butter, melted and cooled, plus extra for greasing
  • 30 mls cold water

for the filling:

  • 200 g shelled raw pistachios
  • 50 g fructose, divided
  • 150 g salted butter, softened
  • 80 g honey, plus extra for drizzling
  • 10 mls vanilla extract
  • 3 eggs
  • 30 g flour

Method

for the pastry:

  • Place the flour and fructose into a mixing bowl and stir to combine
  • Add the butter and water and stir until a soft dough is formed
  • Press the dough into a greased, loose bottomed, fluted pie tin, making sure to cover the bottom and the sides as evenly as possible
  • Allow the pastry to come over the edges, then place into the fridge for at last an hour

for the filling:

  • Place the pistachios and 5g of the fructose into a blender and blitz until fine
  • Set a heaped tablespoon of this aside
  • Place the butter, the rest of the fructose, the honey and vanilla extract into a large mixing bowl
  • Using an electric whisk, beat until thick and pale
  • Add the eggs one at a time, whisking after each addition until well combined
  • Add the pistachios and flour and fold to combine
  • Set aside while you bake and cool the tart shell
  • Preheat the oven to 180° Celsius
  • Place the tart shell into the oven to bake for 25 minutes
  • Remove from the oven and reduce the temperature to 160° Celsius
  • Trim the edges of the pastry, then set aside to cool for 10 minutes
  • Place the pistachio mixture into the tart shell, and smooth it down as best as possible
  • Place the tart back into the oven and bake for 40 minutes
  • Remove the tart from the oven and leave to cool in the tin
  • Brush the top with honey and sprinkle with the pistachios you set aside

  1. Tandy your tart looks perfectly delicious. Just wondering, do you replace the amount of sugar with the exact amount of fructose in all your recipes? With your pastry recipe, Im presuming you didn’t need to blind bake it by adding dried rice or voice of beans, it was ok to just bake it uncovered in the oven. Would love to taste this one. Thanks so much.

  2. Warren Mendes has given you quite a few acceptable new recipes it seems – and I do love the look of all this nuttiness – would so like to reach into the screen to try 🙂 ! Yes, I am a perennial shopping list maker. I have about 3-4 lists-of-things-to-be-bought on the ready at any time . . . and I don’t much vary at the moment with a current rather lean purse 🙂 ! Do have a marvellous time over the the Yule festivities . . . we’ll be here when you come back to tell . . .

  3. I simply adore all things pistachio and love that the Dubai chocolate trend seems to have brought them back to the fore. This looks utterly heavenly! Almost like an improved, all grown up pecan pie.

  5. Hi Tandy, I am not a fan of shopping unless it is for art supplies or books. I order groceries on line and they are delivered. I shop for clothes when my sons or mother tell me they need something and I only go about once in two months.
