I am always so wary of purchasing an item online. Last year I read a travel post comparing two types of travel bags. The LugGo one seemed perfectly good to me, and was within my budget. And on the plus side, they offered free delivery to South Africa. I decided not to order it when we went to The Netherlands in case it was not as perfect as advertised. The company is based in London and as we were going there in June it made perfect sense to get it before that trip. If it had to be returned I could do so from London, and save myself the cost of overseas shipping. The delivery time was listed as 8 to 10 days so in the first week of June I placed my order. Two weeks later it still had not arrived!

Being concerned it might be a scam, I had used PayPal for the payment. I had done so because I thought the refund process would be simple. But it was not! I first had to lodge a query via PayPal which was sent to the seller. I then had a very short time frame in which to request the refund. But I had to wait a week for them to respond. Thankfully the week was up before we travelled to the UK as I would not be able to do anything from there. After eight days I escalated the claim via PayPal. I was then informed that the seller had 30 days to respond. So began the waiting game to see if I would get my money back. I was also told that if I failed to reply to any queries, the case would be resolved in the seller’s favour.

Salted Chocolate Biscuits
Ingredients
- 125 g salted butter, softened
- 125 g coconut sugar
- 85 g fructose
- 5 mls vanilla extract
- 1 egg, lightly beaten
- 210 g dark chocolate, chopped (I use 80% cocoa solids)
- 240 g flour
- 5 mls bicarbonate of soda
- 5 mls salt flakes
Method
- Place the butter, sugar, fructose and vanilla into a stand mixer bowl and cream together
- Add the egg and mix well
- Add the chocolate, and mix to combine
- Sieve the flour and bicarbonate of soda into a mixing bowl
- Add to the stand mixer a tablespoon at a time, until each addition is just mixed in
- Add the salt and mix to combine
- Cover the bowl with cling film and place into the fridge for 2 hours
- Preheat the oven to 170° Celsius
- Divide the dough into 8 pieces and roll each one into a circle
- Press or roll each piece until 1 cm thick
- Place onto a baking sheet lined with baking paper, spaced apart to allow for spreading
- Place into the oven and bake for 20 minutes
- Remove from the oven and leave to cool for 2 minutes on the tray, before transferring on the baking paper to a wire rack to cool completely
