Sourdough Blueberry Muffins

When it comes to these sourdough blueberry muffins, more is best. They are packed full of blueberries and the result is the perfect muffin. I made these when reviving my sourdough starter in December. It took a few days for my starter to be active and bubbly, and we enjoyed a few treats along the way.

It is time once again for me to do Visa applications. Dave and I are going to Italy at the end of April. We were on the cusp of getting five year Visas when Covid struck. Italy, being the hardest hit, have changed their medical insurance requirements for long term Visas. Before, all we had to provide was proof of cover for the existing trip. But now we need to show we are insured for 90 days in any one year. Luckily we have a comprehensive hospital plan that pays out if we are overseas. And according to the documentation, it is for more than is required. While waiting for written confirmation, I have started printing out the small forest of trees we need. I always use their latest checklist which has changed since our last application. It would be much easier if we could upload the documents online.

Most of them are the copies of each Visa we have had. Even though we have had several long term ones, we have also had a lot of short term Visas. My shortest one being for the trip we took in 2021. Most people are of the impression that only an itinerary for flights is required. However, this is not the case. We have booked our tickets using as much of our voucher value as we could. And hopefully we get our Visa as I would not like to cancel this trip! Along with that, the standard proof of accommodation and funds is required. And letters confirming our employment. To this I have added an extra 12 pieces of paper, making our pile seem huge. But in my opinion, I would rather submit more than necessary to bolster our chances. Do you agree, that more is often better?

Sourdough Blueberry Muffins

You need active sourdough for this recipe

Ingredients

  • 270 g fresh blueberries, divided
  • 145 g flour
  • 65 g whole meal flour
  • 5 mls baking powder
  • 2.5 mls bicarbonate of soda
  • 2.5 mls fine salt
  • 100 g butter
  • 150 g xylitol
  • 2 eggs
  • 5 mls vanilla extract
  • 70 g active sourdough starter
  • 52 g crème fraîche
  • 1 lemon, zest only

Method

  • Preheat the oven to 200° Celsius
  • Place 50g of the blueberries into a small bowl and crush
  • Place the remaining blueberries into a bowl, add 15mls of the flour, and toss to coat
  • Place the rest of the flour to a mixing, together with the whole meal flour, baking powder, bicarbonate of soda and salt and whisk to combine
  • Place the butter into a large glass bowl and melt in the microwave
  • Add the xylitol and and stir to combine
  • Add the eggs one at a time to this mixture, and whisk to combine
  • Add the vanilla and whisk to combine
  • Place your sourdough into a measuring cup and add the crème fraîche
  • Stir until smooth then add to the butter mixture and whisk to combine
  • Add the crushed blueberries, flour and lemon zest to the butter mixture and fold until all the flour has been incorporated
  • Add the whole blueberries and gently fold in
  • Spray or line a 12 cup muffin tray and divide the batter between each hole
  • Place into the oven for 10 minutes then reduce the temperature to 175° Celsius and bake for a further 25 minutes
  • Remove the tray from the oven and leave to cool for 5 minutes
  • Remove the muffins from the tray and place onto a wire rack to cool

  1. Eek that sounds like so much work to get a visa! :=) We haven’t done any big O/S trips for years and I doubt we will anytime soon. I do love a blueberry muffin and i’ve never had a sourdough one but i bet they are super delicious!

  3. Hello Tandy Terence requires tickets in order to obtain a visa, I am aware of that. Fortunately, neither my husband nor I require one, nor do our boys. A major hassle is needing a visa. Your recipe is appreciated.
