After a recipe fail the first time I made this baked Camembert I have come up with a recipe that I know will work. This is like the ultimate cheese fondue. It is extremely rich and I would serve it between 4 people.

One cannot really get cross when you win something and it takes a long time to get to you. On the 6th of December I was told I had won a substantial voucher with a food outlet. I was so excited, and the first thing I decided to do with it was buy my staff lunch. But that excitement soon waned when the voucher was not forthcoming. First I was asked to install their App which I did. The voucher was meant to be added to the App but due to some technical issue this could not be done. And a month later I was still waiting. After 4 weeks of being very patient I got hold of the person who had let me know I had won. Finally 2 days later I had a voucher via the messaging service we were using.

I saved the voucher to my phone so that I could email a copy to my laptop. I then printed this off and called an order in for pizzas. As Dave was heading back from Cape Town at lunch time, I gave him the voucher and asked him to collect our lunch. When he got there the pizzas were ready, but the manager did not know about the voucher. Nor did he know how to use it. Thankfully a waiter came to the rescue and he managed to process the payment and we were well fed. I am going to do this every month until the voucher runs out as sharing is caring. But, whereas I could not get cross about the delay, I could get cross the first time I made the baked Camembert and it did not work as the recipe came from a reliable source.

Baked Camembert
Ingredients
- 1 whole Camembert at room temperature
- 2 cloves garlic, cut in half
- 10 sprigs fresh thyme
- Salt and freshly ground black pepper to season
- 15 mls Sauternes *
- 1 baguette for serving
Method
- Preheat the oven to 180° Celsius
- Place the Camembert into a round, ovenproof dish
- Make 4 slices in the cheese (one in each quarter), just deep enough for the garlic
- Place a piece of the garlic into each slice
- Scatter the thyme sprigs on top of the cheese, season and pour over the wine
- Bake for 30 minutes, remove from the oven and pull out the garlic
- Leave to cool slightly before serving with sliced, toasted baguette

I make this but I make cuts in the top of the cheese and add with a syringe a bit of olive oil and white wine for 4 days and let it soak.. After 4 days bake and it is heavenly.. ;-)..
