Buttermilk Waffles

I made pancakes for my birthday and a friend saw the photograph on my Facebook page. She commented that she would love me to make them for her, and when she came to visit I did just that. She suggested that the batter would make for great waffles, so I gave them a go. Sadly, the waffles were not perfect. So, I decided to make some buttermilk waffles to be able to share a recipe with her.

My very long story

Some of you may be wondering why on earth someone would want my cell phone number. The aim of the game is to have access to my SMS’s. This is totally my theory, backed up with information I have had from other friends. Someone at the bank works in tandem with someone at the cell phone providers. The person at the bank must have access to people’s accounts, and can see which ones get One Time Passwords via SMS. These account holders are their target market. They then get their cohort to work on the SIM swap, and as soon as that is done, they swoop in. Either, money it taken out of the person’s account, never to be seen again. Or, their credit card is used to make some serious on-line purchases. These are then sold on for cash in hand.

So, which bank?

I have my personal and business account with one of the major banks. They have seen through many of these scams and the authorisation codes come to me via the App. If I leave the App to answer the phone, or look at a message, they give a warning. My investment account and home loan is with another major bank. They too work through the App as a first resort. But, they will send an SMS if you do not authorise the transaction. My credit card however is the account I think is being targeted. It is administered through a bank that I do not have an account with. So, all my OTP’s come via SMS. This would not surprise me, as friends of mine who have been victims of the SIM swap scam have all banked with this particular bank.

Buttermilk Waffles

The number of waffles you get from this batter will depend on the size of your waffle iron

Equipment

  • 1 Waffle Iron

Ingredients

  • 65 g butter
  • 140 g flour
  • 13 g fructose
  • 5 mls baking powder
  • 2.5 mls bicarbonate of soda
  • 1.25 mls fine salt
  • 1 egg
  • 250 mls buttermilk
  • 5 mls vanilla extract

Method

  • Place the butter into a microwave safe proof bowl and blitz to melt, and set aside to cool
  • Place the flour, fructose, baking powder, bicarbonate of soda and salt into a bowl
  • Whisk to combine then set aside
  • Add the egg to the butter and whisk to slacken the egg
  • Add the buttermilk and the vanilla to this, and then whisk to combine
  • Pour this into the flour mixture and whisk until just combined
  • Set aside while you heat your waffle iron
  • Make the waffles as per the manufacturers instructions, making sure that when you pour the batter onto the waffle iron it does not quite reach the edges
  • Serve with toppings of your choice

  1. Good to know that pancake batter doesn’t make good waffles, I would have tried the same thing. The tip about not letting the batter reach the edges of the iron is useful too. And thanks for the warning about the SIM swap, that’s good to be aware of.
