I am going through a lot of ginger right now as I am adding it to my cooking and the tea I am drinking. I also made ginger coffee popsicles during lockdown as an afternoon treat.

Just before lockdown we had a huge call for sanitiser. I placed several orders with my supplier, but they could not fulfil all of them. This was due to a shortage of bottles, rather than product. As they were expecting a two week lead time on the bottles, I dropped them an email the first week of April. As an essential service provider they should have been operational. I did not get a reply, and was not concerned as my customers were not trading, and did not need to spray down their work surfaces. Two weeks later I sent an email asking them if they were open. When I got a reply telling me they were, I enquired about stock but got no response. By the time we opened for business I needed to find an alternative and there were lots for me to choose between.

I eventually sent them an email cancelling my order. It was substantial and that garnered a response. Straight away my phone rang. Was I sure I wanted to cancel. The sanitiser was in Cape Town, waiting for me. And reformulated to be over 70% alcohol. I explained that had they replied to my original emails I would have taken the stock. But by the time they called I had already purchased elsewhere. However, I am sure it will not take too long for my customers to work their way through what I have supplied. Everything has to be sprayed and sanitised now. Hands of people coming into premises. Work surfaces during the day. And goods that come in from suppliers.

Ginger Coffee Popsicles
Ingredients
- 600 mls milk
- 12 g instant coffee powder
- 12 g gingerbread spice
- 90 g honey
Method
- Place the milk into a saucepan and heat over a medium temperature
- Add the coffee and spice and whisk to combine
- Add the honey and stir until melted
- Set aside to cool before pouring into your popsicle moulds
- Place into the freezer to set

Ginger is good for my tummy and I’ve been looking for ways to add it to my diet. Ginger coffee frozen treats will taste nice in our coming summer weather.

Ginger coffee popsicles….oh m goodness Tandy, you think of everything! I love both but can’t imagine imagine what they’d taste like. I wonder if I can find instant coffee for this recipe in decaf? One never knows! Sorry about the sanitizer situation, it’s 100% sold out here! People went nuts.
I am sure you can find decaf instant coffee. I am lucky in that a lot of my suppliers have stock of the sanitiser 🙂
