Overnight Oats

These overnight oats can be left in the fridge for up to 3 days. This makes preparing ahead for breakfasts quite simple. A serving is 220 grams and to each serving you can add 80 grams fruits, 2 tablespoons of yoghurt or sour cream, and a heaped tablespoon of toasted flaked almonds. For an extra caffeine burst, add a shot of espresso and a sprinkle of cocoa powder.

Overnight Oats

I have previously made overnight oats, and cannot say that I particularly liked them. I love hot oats, but it is the combination of cold oats and no texture that made me not like the overnight version. In Eat Yourself Healthy, Jamie offered up add on ingredients that would give me the bite I look for in my food. I made half a batch to start off with, and had one portion for lunch the following day. One portion was given to a friend, and I had the other one the following day. I was not enamoured enough to make more, but Dave asked to try and so I did. We shared that for breakfast, but Dave said I need not make it again. But, for those of you who love overnight oats, this is a great recipe!

Last month, we were faced with the news of the Hantavirus. I think this would have gone unnoticed in South Africa had someone not died here. And no sooner had this news broken than conspiracy theories started flooding the internet. From this is man made in a laboratory to don’t fall for another pandemic, people had something to say. Covid deniers and their ilk now had something new to hang their hat on. I wish these people realized just how much damage they can cause by sprouting all sorts of nonsense. I have a friend who believes everything she reads. And for people like her, this would do not good, and maybe even do harm. This virus had tragic endings for so many people. And I can only hope that those who survived this, tell their story so that the world knows how dangerous a virus can be.

Overnight Oats

This recipe makes enough for 1 person for 3 days

Makes enough for: 3 portions

Ingredients

  • 350 mls low fat milk
  • 160 g banana, peeled and thickly sliced
  • 5 mls vanilla extract
  • 150 g rolled oats
  • 1 apple, coarsely grated

for my add on:

  • 80 g fresh figs, thinly sliced
  • flaked almonds to scatter on top

Method

  • Place the milk, banana and vanilla into a blender and blitz until smooth
  • Place the oats into a medium size bowl and pour the milk over the oats
  • Add the apple, mix well to combine then cover and place into the fridge overnight
  • Each morning, weigh out 220 grams, and add your add ons as desired *

Notes

* 80g seasonal fruit together with 30mls yoghurt or sour cream and a heaped tablespoon nuts or seeds. Think about adding citrus zest, a shot of espresso and cocoa powder. Let your imagination run wild!

  1. When I was a child hot porridge was on the table, be it oats or farina, five days a week . . . I hated it! So, it has not been in purposeful view too often now. But, at the moment when I do make all my own cold breakfasts in the studio I live at the moment . . . something like this would be quite ‘doable’ as a change from my smorrebrod and morning wraps. Shall keep your recipe and see next time my on-line shop is on 🙂 !

  2. oh my word, people are so nonsensical with their conspiracy theories! I really love overnight oats and have them regularly. I add in nuts and fruit etc… I do like hot porridge as well; must be the Scottish in me 🙂

Figs are my favorite ; back home I always eat them from the tree just taking a peek at it to make sure I am not eating worms as well 🙂 Pandemic was horrible… but everything seems to have a cycle of 7 years… Let’s see what comes next… Love always, ~Nessa

    1. We had two fig trees in our garden when we were children and had to watch out for half eaten ones that the birds got! I miss being able to just pick and eat 🙂

  5. I eat oatmeal for breakfast a few days a week and truthfully I forgot about making overnight oats, which I do enjoy. This recipe looks really good to me and I will give it a try. Thanks.
