Pasta With Bacon, Mushrooms And Tomato

Cindy started a theme of pasta on Tuesday’s and I am going to keep to this theme as long as possible.  It started with a challenge to use only 5 ingredients. I think that the simpler a pasta dish is, the better it is as you get to taste the ingredients. This is the same for every meal, do not over complicate the plate. I just love this recipe for Pasta With Bacon, Mushrooms And Tomato.

Pasta with Bacon, Mushrooms and Tomato
  • pasta of your choice
  • 4 rashers streaks bacon
  • 15mls olive oil
  • 2 shallots finely sliced
  • 1 garlic clove finely sliced
  • 1 red chilli left whole
  • 125g mushrooms sliced
  • 125g tomatoes chopped
  • 60mls crème fraîche
  • 50g Parmesan grated
  1. while you are cooking the pasta fry the bacon in a dry pan
  2. remove when the fat is nice and crispy and add the olive oil
  3. chop up the bacon
  4. fry the shallots with the garlic and the chilli until the shallots are translucent
  5. add the mushrooms, tomatoes and bacon
  6. just before the pasta is ready remove the chilli and add the crème fraîche and the parmesan
  7. toss the pasta through the sauce and serve

  1. A good Tuesday choice. I’m not cooking tonight, as I have an event to attend. But I’ve bought some straight-to-wok noodles from Woolies so Alan can do a quick stir-fry for himself and Chelsea.
