Cindy started a theme of pasta on Tuesday and I am going to keep to this theme as long as possible. It started with a challenge to use only 5 ingredients. I think that the simpler a pasta dish is, the better it is as you get to taste the ingredients. This is the same for every meal, do not over complicate the plate. I just love this recipe for Pasta With Bacon, Mushrooms And Tomato.
Pasta with Bacon, Mushrooms and Tomato
Ingredients
- 200 g pasta of your choice
- 4 rashers streaky bacon
- 15 mls olive oil
- 2 shallots finely sliced
- 1 clove garlic, finely sliced
- 1 whole red chilli
- 125 g mushrooms, sliced
- 125 g tomatoes, chopped
- 60 mls crème fraîche
- 50 g Parmesan, grated
Method
- while you are cooking the pasta fry the bacon in a dry pan
- remove when the fat is nice and crispy and add the olive oil
- chop up the bacon
- fry the shallots with the garlic and the chilli until the shallots are translucent
- add the mushrooms, tomatoes and bacon
- just before the pasta is ready remove the chilli and add the crème fraîche and the parmesan
- toss the pasta through the sauce and serve

I really miss these pasta dishes, even though at one stage I flooded my blog with them. Now, ten years down the line, we are still making simple Italian meals. These are usually reserved for a Sunday when Dave cooks. He clears out the fridge, making use of all the leftovers. We tend to stick to 5 or less ingredients as that is how we prefer our meals. It is all about the flavour which comes from seasoning. And whereas this photograph does not scream eat me it really is a dish you can enjoy. It is packed full of flavour and comes together in as much time as it takes your water to boil and your pasta to cook.
A good Tuesday choice. I’m not cooking tonight, as I have an event to attend. But I’ve bought some straight-to-wok noodles from Woolies so Alan can do a quick stir-fry for himself and Chelsea.
