Protein Bars

With the economy the way it is, making your own protein bars makes a lot of sense. Also, this way you will know exactly what has gone into them. And, they have a very short ingredient list compared to some commercial ones. The chocolate is totally optional in my opinion, but it does make them feel more indulgent. Adapted from Jamie Oliver’s recipe book, Eat Yourself Healthy.

Getting it sort of right

A friend and I have discussed at length, the best time to eat in the morning. And what you should be eating. I usually have an egg before I make my smoothie. But, when I saw a recipe for mini protein bars, I decided to change things up. As they contain banana and peanut butter, I knew Dave would not have any. He will only eat bananas out of the skin, and when not quite ripe. And he will not go near peanut butter if it was the last thing to eat in the house. I made half a batch as I was not sure if I would enjoy them or not. And I can say that you must use crunchy peanut butter. I was not going to buy a jar just for 75g, but it would have made them better.

Not quite getting it

I wrote about our future train trip to Paris before I had booked the tickets. When it finally came time to doing so, I booked us on train number 9340. When I had done the research, this was the same train I could book for our friends. But, when it came time to do their booking, there were no seats available, and so I booked them on train 9350. Our train originates in Amsterdam. It is then meant to be coupled to the 9350 train when it arrives in Brussels. That train only goes from Belgium to France. The two trains will then go as one to Paris. But, with the engine being in-between the two trains, I cannot even swap places with Eric, as I cannot get through to their carriage. This also allows for our train being late, so the other one can leave on time.

Protein Bars

I would recommend using crunchy peanut butter for texture
Recipe Category: Baking, Breakfast, Snacks
Makes enough for: 16 protein bars
All Rights Reserved: Adapted From Eat Yourself Healthy page 278

Ingredients

  • 300 g banana, mashed
  • 250 g rolled oats
  • 150 g peanut butter
  • 50 g soft pitted dates, finely chopped
  • 50 g linseeds
  • 25 mls maple syrup
  • 1.25 mls ground cinnammon
  • 25 g dark chocolate, melted optional, or add more if desired

Method

  • Preheat the oven to 180° Celsius
  • Place the banana, oats, peanut butter, dates, linseeds, syrup and cinnamon into a bowl
  • Mix well then transfer to a lined brownie tin and press down
  • Score into 16 bars using a knife then place into the oven and bake for 20 minutes
  • Place the chocolate into a microwave safe bowl and blitz to melt, in 30 second batches
  • Remove the tin from the oven, drizzle the chocolate over the top of the bars and leave to cool
  • Remove the bars from the tin, slice into 16 bars and store in an airtight container in the fridge

    1. I don’t mind plant protein powder as that is what I use at home, it is all the sugars and E numbers that concern me 🙂

On a side note, did I get that you are on your European trip, I do not why, I thought it was going to be in September?!? Heat wave is coming, stay hydrated! ~Nessa

    1. Nope, we are only going in September, but everything needs to be booked as soon as possible, as tickets sell out quickly 🙂

  3. Making your own protein bars is such a smart move for the wallet, and it is a total bonus knowing exactly what ingredients are fueling your morning. It is pretty funny how specific Dave is with his banana and peanut butter rules, but hey, that just means more delicious, chocolate-drizzled treats all for you! On the travel front, that train coupling situation sounds like a bit of a logistical puzzle, but hopefully, the journey goes smoothly and you all have the best time in Paris.
