Taking three spices that work really well together, I made these spiced cookies. The recipe only makes 6 but can easily be doubled, or trebled.

Ginger
Fresh ginger has a lot more heat than dried ginger, which is what was used for this recipe. Most commonly used in curries, ginger works just as well in sweet applications. Pair this spice with almonds, apricots, chocolate, coffee, lemons, limes, mangoes, melons, oranges, or rhubarb in desserts. Or for savoury dishes use it with aubergine, beef, cabbage, eggs, fish, onions, pork, squash, or tomatoes. Cinnamon
Cinnamon is great with apples, almonds, chocolate, coconut, coffee, peanuts, soft cheeses, and walnuts. As a warm spice you will find it in recipes for Moroccan tagines, Mexican moles and Indian lentil dishes. Cinnamon plays well with anise, cardamom, clove, ginger, mint, and thyme. Pair it with apricots, bananas, blueberries, butternut, carrots, cherries, figs, grapefruit, limes, oranges, pears, pineapple, strawberries, tomatoes, and watermelon. Or use it to add bitterness to dishes containing beef, lamb, and pork.
Cloves
Resembling a nail, cloves are a hard spice with a tongue numbing effect and hot flavour. Use sparingly when making desserts using apples, coffee, oranges, or peaches. And for savoury recipes, cloves go well with bacon, beef, cheese, onions, pork, or tomatoes. As for herbs and spices, use cloves with basil, cinnamon, ginger, and vanilla.

Spiced Cookies
Ingredients
- 70 g coconut sugar
- 45 g butter, softened
- 1 egg
- 130 g flour
- 5 mls ground ginger
- 2.5 mls ground cinnamon
- 2.5 mls baking powder
- 1.25 mls bicarbonate of soda
- 1.25 mls ground cloves
Method
- Preheat the oven to 180° Celsius
- Place the sugar and butter into a stand mixer bowl and cream together
- Add the egg and beat to combine
- Add the flour, ginger, cinnamon, baking powder, bicarbonate of soda and cloves into a mixing bowl and whisk to combine
- Slowly add to the stand mixer bowl while beating, until a dough forms
- Use an ice cream scoop to measure the dough into 6 equal pieces and roll each scoop into a ball
- Place each ball onto a lined baking sheet, well spaced out to allow for spreading
- Flatten each ball with a spatula and place the baking sheet into the oven to bake for 12 minutes
- Remove the baking sheet from the oven and leave the cookies to cool on the tray for 5 minutes before transferring to a wire rack to cool completely

Your spice cookies are actually very similar to Estonian ‘piparkoogid’ or Christmas cookies except for a much larger size. Tasty and moreish and not too sinful 🙂 !
