When we were on holiday, Bev had with her a batch of oat choc chip biscuits. I asked for the recipe, and have adapted it to make them sucrose free. These have been called chewy oat biscuits as they did not get the same crunch hers did as I used honey in place of golden syrup. I told a friend about these yesterday, and she said she loves a chewy ‘crunchie’. If you do as well, then these are perfect for you.

Starting over
When I moved to Gordons Bay in 2001, it was for the promise of a new beginning. I did not know it at the time, but many obstacles would be placed in my way. One of them resulted in me having to file a Police Report, a hangover from a previous incident when I lived in Bryanston. Dave and I put out one fire after another because of the actions of one single person. Business for both of us would be a struggle, trying to establish ourselves in a very closed off community. And, we had to learn to navigate life together as a couple. We needed to find a place to call home and we needed to make a new circle of friends. But, I don’t regret my decision to sell up, leave my friends and family behind, give up my well paying job, to start over.
My very full life
My life right now is so full. I have work that keeps the roof over my head, and allows me to travel. We have a beautiful home that has had so much of Dave’s time and effort put into it. Dave’s business keeps him mentally engaged with new challenges. I have a circle of friends I can rely on who I see regularly. And Dave and I are part of an amazing group of people. We are able to live a life that makes us both happy, and content. And whereas things are not perfect, they are good. And, I am not seeking perfection. I know that some things just cannot be as we would want them to be, and we have to learn to live with that. We will continue to grow together as we live our lives together.
