Chicken And Kiwi Salad
For the next 14 days I will be competing in South Africa’s Zespri Kiwi Fruit Challenge. Together with 8 other bloggers I will be bringing you tips, ideas and recipes. These will feature here on the blog as well as on twitter and Facebook. The winner of this challenge will be decided by who scores the most points and that person will receive R5000. We have been allocated 2 kiwi fruit a day and for the first day I decided to make a lovely chicken and kiwi salad. This to me is a great lunch box lunch as the cos lettuce stays nice and crispy and if you don’t have knives and forks with you, you can use the cos as a lettuce wrap for the salad. I have used nasturtiums that are growing in abundance in my fynbos garden as well as some coriander flowers for this salad, but you can use any edible flowers you can find. I hope you try some of my recipes and ideas along the way.

Chicken And Kiwi Salad
Ingredients
for the dressing
- 30 mls olive oil
- 10 mls pomegranate and cranberry white balsamic vinegar
- Salt and freshly ground black pepper to season
- 15 mls roughly chopped coriander
for the salad
- 2 skinless chicken breasts
- Salt and freshly ground black pepper to season
- 5 mls olive oil
- 4 cos lettuce leaves
- 2 kiwi fruit, peeled and sliced
- Edible flowers to garnish
Method
for the dressing
- Mix together all the ingredients and set aside
for the salad
- Season the chicken breasts
- Heat the olive oil in a non-stick frying pan over a high heat
- Cook the chicken breasts for 15 minutes or until done
- Slice the chicken breasts and toss in the salad dressing
- Serve on top of the cos lettuce, with the kiwi fruit and the flowers
