Condensed Milk Rolls

These condensed milk rolls are sweet and best suited to toppings that are super salty, or fiery from the heat of chilli. I took some west coast rock lobster, slathered in a Sriracha sauce, and made lobster rolls for dinner on Valentine’s night.

For many years, I purchased our electricity and paid my accounts in-store. But then about a year ago, one of my loyalty cards offered 20 points for each transaction done online. This incentivised me to change and is far more convenient. The first month I completely forgot I had done so, and when I called them they could immediately see what had been paid. Now I know that all amounts reflected as being online purchases with them are in fact third party payments. Last month when buying electricity the transaction failed. They sent me an email confirming that the amount would be credited to my card straight away. But when I did my credit card reconciliation I could see the refund had not been done. I sent an email to them and expected that the process would be a run around. Instead I got an immediate reaction.

I was given three options to choose from. They could process the credit which would take 5 to 7 working days, or I could get a replacement electricity token. The third alternative was a credit on my loyalty card for the same amount. I decided this was the best way to go as it would be the most immediate action. I was told I would have to wait 24 hours for it to reflect which did not bother me. But in fact, it took less than half a day. The best part of this is that I didn’t have to remember to use the refund as it was automatically applied at the till when I made purchases. And as I shop with them on a weekly basis, it was soon used up. This is excellent customer service which should be the norm, and not the exception.

Condensed Milk Rolls

These rolls are sweet and need to be eaten within a day or two of baking

Ingredients

  • 200 g condensed milk
  • 125 mls boiling water
  • 70 g fructose
  • 60 g soft butter, plus extra for greasing
  • 7.5 mls fine salt
  • 250 mls tap water
  • 1 egg, egg, lightly beaten
  • 700 g flour, plus extra for dusting
  • 7 g instant dried yeast

Method

  • Place the condensed milk, boiling water, fructose, butter and salt into a stand mixer bowl
  • Stir until the butter melts then add the tap water, stir and set aside to cool
  • Once cool, add the egg and use a dough hook to combine the mixture
  • Take half a cup of the flour and add it to the bowl with the yeast
  • Using a dough hook, mix the flour in, then add half of the remaining flour and mix
  • Once it starts to combine, add the rest of the flour and continue mixing
  • When a dough forms, knead the mixture for 10 minutes
  • Generously dust your work surface with flour then turn out the dough and knead it into a ball until it just stops sticking *
  • Dust the bowl with flour, place the dough into it, seam side down and sprinkle flour over the top of the dough
  • Cover and leave to prove until doubled in size
  • Turn the dough out onto a lightly floured surface and divide into 9 pieces
  • Flour your hands and roll each piece into a ball
  • Generously grease a square baking tin and place the dough into the tin, seam side down
  • Cover and leave to prove until the dough doubles in size
  • Preheat the oven to 160˚ Celsius
  • Place the tin into the oven and bake for 60 minutes
  • Remove from the oven and turn the rolls out onto a wire rack, carefully breaking them apart
  • Leave to cool completely

* you might need to add more flour at this stage.
