According to Heal, this ginger and lime granola is high in fibre. I can attest that it is packed with flavour. We all loved the ginger, and I particularly enjoyed the crunch when added to yoghurt.

It took me five weeks to finally catch up and get a month ahead in my posting schedule. I spoke about changing this, but I just cannot find a way to make that work. Google has an optimum word count for blog posts which currently sits at a minimum of 300. I could have stopped writing my little missives each day. But then I would be way under the word count. And I like sharing my life with the world. So here we are, finally a month ahead and with a plan in place that I hope I can stick to. I am aiming at writing a blog post every single day. Now, that sounds all good and well. And I know life will get in the way. But there is a reason for this. On the 10th of December we are going away for our wedding anniversary.

We go away every year with friends and this time around we are spending two nights in Franschhoek, self catering. The work week leading up to the 17th will be hectic as we close for our annual break on the 15th. Our holiday will begin with celebrating our 19 years of marriage with a meal at home with our housesitter. And I am sure by the time that rolls around we will have been out for dinner a few times to mark the end of the business year. On the 17th of December (today as you read this) we leave for overseas. We are meeting my parents in Vienna and we plan on spending the time together exploring Austria and Slovenia. If all goes to plan my blog posts will be scheduled for the two weeks after we get back. Giving me plenty of time to settle into the new year.

Ginger And Lime Granola

Serve with yoghurt, or eat as is when you need something to snack on

Makes enough for: 1 batch granola

Ingredients

  • 140 g maple syrup
  • 75 g coconut oil, melted
  • 70 g tahini
  • 37.5 mls ground ginger
  • 130 g raw almonds
  • 65 g pumpkin seeds
  • 45 g linseeds
  • 40 g sunflower seeds
  • 35 g almond flour
  • 20 g coconut flakes
  • 3 limes, zest only
  • 2.5 mls fine salt
  • 50 g goji berries

Method

  • Preheat the oven to 160° Celsius
  • Place the syrup, oil, tahini and ginger into a small bowl and whisk to combine
  • Place the almonds, seeds, flour, coconut, zest and salt into a large mixing bowl
  • Stir to mix then add the syrup mixture and mix until combined
  • Tip out onto a lined baking tray and spread out as evenly as possible
  • Place into the oven and bake for 20 minutes
  • Remove from the oven, turn the granola over with a spatula and place back into the oven for 20 minutes
  • Remove from the oven, lower the temperature to 120° Celsius, and mix the granola with a spatula
  • Place back into the oven and bake for 10 minutes
  • Remove from the oven, add the goji berries and mix to combine
  • Leave to cool on the tray before storing in an airtight container

  2. I’m impressed with your organization! I really struggle to get ahead and I only post twice a week! Hope you have a great trip and Covid doesn’t make things too difficult. We just decided to do a week vacation in January despite the increases. Can’t wait to hear about your trip! (And yes, I like a some crunch with my granola too!)
