I have had many people commenting regarding our booze ban. When South Africa went into hard lockdown 11 months ago, there were a few priorities. We all had to stay home and only go out for essentials. These did not include alcohol and cigarettes, as well as many other items. In this time, our hospitals aimed to gear up for the expected Covid-19 patients. Alcohol related trauma cases apply a great deal of stress on our hospitals. And the reasoning behind banning the sale of alcohol was to ensure the trauma wards had space for the wave of people expected to succumb to the virus. There was also a curfew in place to ensure the roads were empty at night. As another leading cause of hospital admissions is car accidents, this too made sense. Eventually our booze ban was lifted and curfew relaxed. But in December that all changed.

The second wave hit us, and hit us badly. Our recovery rate which had been over 90% dropped to under 80%. Hospital admissions crept up slowly but surely. And more and more people were becoming infected. At the end of the month our President announced a ban on the sale and on-site consumption of alcohol. And curfew was earlier in the evening. Whereas many people bemoaned the fact, I am sure the Doctors and Nurses did not. For the first time ever Chris Hani Baragwanath Hospital, which is the third largest in the country, had not one alcohol related trauma on New Years’ Eve. Part of the mission had been accomplished. As soon as our hospital cases came down and our recovery rate went up, we could go out and buy alcohol again. The timing was perfect as we were down to our last bottle of whisky.

Oven Baked Courgette Fritters

These are perfect to make ahead as they will keep in the fridge for a few days, or can be frozen

Ingredients

  • 2 eggs
  • 200 g courgettes, grated
  • 100 g self raising flour
  • 80 g cheddar cheese, grated
  • 80 mls milk
  • 5 mls baking powder
  • salt and freshly ground black pepper to season

Method

  • Preheat the oven to 200° Celsius
  • Crack the eggs into a mixing bowl and whisk to slacken
  • Add the courgettes, flour, cheese, milk and baking powder
  • Stir to combine then season to taste
  • Pour the batter into a lined brownie tin and flatten as best as you can
  • Place into the oven and bake for 25 minutes
  • Remove from the oven and tip out onto a cutting board
  • Cut into squares or strips and serve

Love zucchini and have not baked any fritters made from them in thus manner – as I live solo, especially during this complicated time, your recipe will be both a tasty and practical one for me to follow . . . thanks . . . like the baking ! As far as alcohol sales in Australia are concerned, *smile*, I do not think our lockdowns would have worked at all if Dan Murphy’s and Liqourland trucks had not been able to work overtime ! Different societal circumstances perchance . . .

  2. These fritters using “courgettes” as you term them in South Africa look fabulous~ although these will be zucchini and summer squash in my brain. One of my favorites. I am bookmarking this recipe for summer when the flush of veggies come in. I love growing courgettes!

  3. These look good. I assume the zuchini should be grated or chopped into small cubes. A fun recipe to make with the kids.

    1. Just gives it a bit of a rise. I make my own self raising flour so if you don’t have to hand take 150g flour and add 10mls baking powder. Or 5mls each baking powder and bicarbonate of soda.

  5. That sounds quite delicious. We have an Italian-American dish called frittata that’s pretty much the same (sometimes also called a crustless quiche), and would use the word fritters for patties that are made in a frying pan. But very nice also.
