Serendipity: noun. The occurrence and development of events by chance in a happy or beneficial way. This perfectly describes a set of events that started with a normal shopping experience. Every afternoon that I train at gym I go shopping. This ensures that I only buy the vegetables that we need. The shop is next to the gym so it is not inconvenient at all. And daily shopping is a habit I have from overseas. On the 19th of July I found fresh halloumi while buying cheese. I have only made it a handful of times, but decided that it would make a nice change to our usual tomato topped bruschetta. Then on the 20th Caroline posted a recipe for rosemary and garlic butter halloumi. I decided to make this for starters when we had guests coming to us the following Sunday. But I never got around to doing that.

Then Salty Flames dropped off some smoked garlic for me to test and I knew straight away it would be amazing with the halloumi. Finally on the 5th of August I fried some up and it was an instant hit. So much so that I had to turn the rest of my halloumi into a smokey halloumi salad with seed brittle and a ginger dressing. It has to be one of easiest salads I have ever made and certainly ranks up there with one of the tastiest. A big thank you to Caroline for the inspiration and to Salty Flames for the smoked products. You can make this salad without the seed brittle and salad dressing if you are looking for something really quick to make or if you are need of an instant snack.

Smokey Halloumi Salad
Ingredients
- 15 g butter softened
- 1 giant clove smoked garlic roughly chopped
- 5 mls smoked salt
- 100 g mixed green leaves *
- Ginger salad dressing
- 150 g halloumi cut into 6 thin slices
- Smoked paprika for sprinkling
- Seed brittle
Method
- Muddle the butter, garlic and salt in a mortar using a pestle
- Place the leaves into a bowl and coat with the salad dressing
- Heat a frying pan over a medium to high temperature
- When hot place the halloumi into the pan
- Leave to brown and flip
- Sprinkle the cooked side with the smoked paprika
- Add the garlic butter and as soon as it is melted take off the heat
- Shake the excess dressing off the leaves and place onto a serving platter
- Add the halloumi and the broken up seed brittle and serve straight away
